The second day, the vinegar etch and al feeling disappeared (but not completely), and the rich umami sweetness came in. I paired it with cheese, as it seemed to go well with food. It was only so-so.
On the fourth day, it became much tastier. The corners have been removed and the whole wine is mellow.

The overall flavor is clean, but the sweetness is complex. The complexity of the sweet and tasty flavor comes out in the front because the sweet and tasty flavor is so mild. It is a sake that impresses you more than it tastes good.
