On the second day, the etchiness and aliveness disappeared (not completely), and the dark umami sweetness came in. The second day, the vinegar etch and al feeling disappeared (but not completely), and the rich umami sweetness came in. I paired it with cheese, as it seemed to go well with food. It was only so-so.
On the fourth day, it became much tastier. The corners have been removed and the whole wine is mellow.
First bottle of No. 4. Usually a corner bottle. The aroma is almost nonexistent. Mimuro cedar is not so sweet and delicious, but the aroma through the nose is juicy muscat. The overall flavor is clean, but the sweetness is complex. The complexity of the sweet and tasty flavor comes out in the front because the sweet and tasty flavor is so mild. It is a sake that impresses you more than it tastes good.
It has a very good balance. The sweet flavor comes in softly and lands slowly. It is not too much, but not too sharp either. For some reason, I don't feel Omachi, but that's not a problem. Let's see how it progresses.
