After the concert (3) A carefully selected drink from the three recommended by the staff 👏. Chilli tongue and slightly carbonated. Sweet and sour deliciousness! Delicious! I had two onigiri for entrée....and some salmon and cod roe, but I didn't get a picture,..., Rice on rice, rice on rice...a tour de force. No wonder I was so hungry 😋.

So called "dry"! The umami of rice is easy to drink. It has an old man's feeling that is not too much like Shinzawa Brewery's. Yes, a middle-aged feeling. (You get the picture.) The harmony of the slight sweetness and bitterness of the rice. Good for a dinner drink 👏.

My first Wakayama sake I found in the sake section of a shopping mall I happened to visit 🙌 Opened the bottle immediately🎉! I thought it was a little chili when it got on the tip of my tongue, but it wasn't? I thought it was a little chili when it got on the tip of my tongue, but it wasn't? The bitterness and sourness match each other and pass by. The old man feeling! It's not so much that I'm an old man, but it's not so shallow that I'm a hot old man, but it's a good middle-aged feeling 👏. It's totally different from what I expected! My first impression was that he is a Kid, but he is not a Kid at all. I was surprised 🫣. I don't know if it will grow well, but I'd like to put it there for a while.

Nice to meet you, Hakurakusei! I've been looking for you for a while now 👏. I had seen your name before! Hakurakusei! Miyagi Prefecture's #1 Sake! 🎉 From the back label, the ultimate food sake, refreshing and sharp, you will like this! I took a sip with this image. Yum✨. No peculiarities. It has a nice aroma in the mouth, but when you swallow it, it finishes with a touch of alcohol and umami, but it's still sharp. It is the type that doesn't interfere with the meal, doesn't assert itself too much, but gently adds to the flavor...yes, just like the daikon radish balls that accompany the sashimi! (????) I couldn't come up with an easy-to-understand analogy (‼︎), but it is delicious!

As sweet as I had heard! The moment you taste it, it's a bit of a chili on the tip of your tongue, sweet mouthfeel and fruitiness through the nose, and then a little bit of alcohol to finish it off... this is the kind of thing that makes you drink too much 😀✨. Gifu's Hourai sake brewery. I've heard of Hourai! I've never had it! So I'd like to drink Hourai too 😋. I was surprised when I looked at the back side! I remembered that a girl I was good friends with in junior college was from Furukawa. Just a small story here 🍶. I've been drinking a lot of alcohol and participating in sake festivals, but I haven't been able to post anything in time. Postscript (10/23) ✍️ The bottle has been open for one week! This may have been at its peak of deliciousness right after opening the bottle. When it was less than half full, it started to feel alcoholic all at once. Drink up!

I drank it cold anyway because it was the first time. I thought it smelled a little bit like old man's sake, but the taste was moderately light. The moment I thought it was the umami of rice, I thought, "What's that? I thought it was the flavor of rice, but it was so sharp! I like it. ☺️ Postscript (10/10) ✍️ It doesn't change much until the end! I tried heating it up a few times halfway through, but I think I still prefer it cold 🤔.

Rich aroma. Shiraoi-like + refreshing. Good-looking Oji. Aromatic and delicious. Easy to drink with low acidity. I wondered if convenience stores near Shiraoi's brewery sold this kind of sake, and I finally picked it up. Aruzoe-san, which is rare for me! Learning that it tastes good but don't drink a lot of it.

Immediately after opening the bottle, when it is well chilled, it has a delicious sweet aroma and a fluffy taste. Bitter taste from the first. The acidity is moderate. It becomes sharp when it is cold (at room temperature). The sweetness of bananas → the alcohol taste. In a word, I like it! Sake Rice Story 🍶. As the label on the back says, Tamaei originated in Aichi Prefecture. The reason why it is now mainly grown in the San-in region, despite its origin, is not only because of the climate, but also because of the certification required to produce it in the first place (technically, to be able to call oneself a producer)...in terms of seed preservation and so on. And so on and so forth. We had a good time drinking sake at the corner bar, and the brewer, who had become a familiar face to us (?), told us some interesting stories. It was fun to hear the brewer talk about everything from rice to sake brewing, from the brewery to other breweries, and even a nice sake shop! Postscript (9/23) ✍️ The bottle has been open for 2 weeks! I can feel the lateral expansion! It's like the flavor is expanding. The bitterness is gone and it's well rounded. Good taste!

This is the third in a series brewed by a group of seven anonymous brewers. This time, it is from Shikishima's Ito Goshi (...or is that interpretation even correct?), so we went to the brewery's directly operated store for a kaku-uchi (corner drinking) session! We compared three different kinds of sake with KT, which is also from Yume-Ginko. The 50% rice polishing ratio certainly gives Yume-Ginko this taste! It was like the taste of Yume-Ginko was neutralized. I couldn't tell the difference between the two phantoms even though I was very careful to compare them (I couldn't tell the exact difference)! The subtle difference may be due to the difference in timing of opening the bottle or something on that level...mmmm 🤔...but it was delicious! And that's the end 😋. This Phantom series is only available at Kamekuchi, which is directly operated by the brewery, and at a few YATA stores in Nagoya and other cities. Also, I heard you can get it through Kurafan. So, what is this Phantom series? I remembered that I drank Sekiya's Phantom at YATA last March, and dug up the Sake no Wa post. Is it the same series? I never got to the bottom of it.

I was scared to open the bottle because of the warning ⚠️, but when I opened it, it opened lightly 🎉. I wondered what it would be like with 60% polished rice, but it was so easy to drink! The aroma is gentle, and the sourness and sweetness come together in the mouth, and then finish with a sense of alcohol. 🍶💍 We opened a bottle of today's welcome 🎉. Pale gray with a red foil-stamped label. The sake is slightly amber in color. First sip after chilling it thoroughly. It has a sour taste but also has a strong umami flavor, and is easy to drink despite its appearance! Delicious 😋. When I bought it, I was told that it would be perfect for summer if mixed 1:1 with soda and served as a highball! This was too good to be true. The label on the back says that the acidity rounds out after a while...so I imagine that a highball right after opening the bottle would be good! Refreshingly delicious 😋. Postscript (9/6) ✍️ It's been 10 days since the bottle was opened. The acidity is really coming off! Harmony of sweetness and bitterness! The sweetness and bitterness are in harmony! It's delicious. Postscript (9/12) ✍️ The bottle has been open for 16 days. Drank it all. Almost no acidity? Old sake feeling rather a little?
