Purchased 3 bottles of Kaze no Mori at a liquor store near the brewery. A New Year's holiday extravaganza. The first one, 807, is described as dry and complex. The sweetness comes first and the aftertaste is dry. Delicious. I've had many Polished 80s that were heavy, but I've never had one that was this light, individual, delicate, and aromatic. I was surprised.
Superior quality. It is fresh, but not too heavy, not too sweet, and easy to drink. Storage temperature is -5 to +5 degrees Celsius. I was a little surprised. I think it has deteriorated. But it was still delicious.
This is delicious (and cheap). The man's sake (old). The water is good, or maybe it is, but the taste is mild, smooth, and gentle. It is not too thick, and goes in easily. Hot sake, a glass of sake. I like to drink it while watching the Sea of Japan in winter.

I didn't know there was a fruit series, and was unsure about the melon and the apple. Indeed, the first sip was slightly effervescent, with a sweet and sour apple taste.
