I was attracted by the squid description and bought it. It definitely has a bit of a vinegar feel to it and looks good for summer! The presence of acidity is taken one step forward. In this "Act IV," we aim for an expression in which the acidity clearly appears in the sake, but never in a crude way; it rises up with a core of tranquility. Even during the heat wave of 2024, the Yamada Nishiki harvested in Kurodasho was as excellent as in previous years, but we dared to sublimate this blessed rice into a dignified bottle by layering acidity on top of it. We hope you will enjoy the new outline of elegance brought about by the acidity.
