Rice: Akitsuho (from Nara Prefecture) It was the first "Kaze no Mori" I bought with high expectations, but ALPHA3 seems to be a stable sake that aims for the freshness of freshly pressed in the type of fire-retarded, which is not done conventionally, to send out to the world. It has a soft ginjo aroma with a hint of sweetness, and when you put it in your mouth, you can feel a slight fizziness, gentle sweetness and acidity, and the taste of the rice comes out! When the bottle is opened, the man is booming like when you open a bottle of champagne. After 4 to 5 days, the texture becomes calmer and lighter, and it releases smoothly, and the sharpness seems to have improved... I could taste it much better after the gas was released than right after opening the bottle!
