I've been wanting to try this Hirotogawa and I got the newly released Junmai Daiginjo!
When I opened the bottle yesterday, it seemed to disappear as soon as I drank it, which left me feeling a little underwhelmed, but the second day after opening it, it was seriously badass and too delicious!
The aroma is reserved and clear, but very elegant, and the taste is crisp and light with good bitterness and umami spreading all over the mouth.
Sake is so deep and fun to drink because it changes after opening the bottle!
First time drinking Kamo Nishiki, I started to get into the sake swamp and selected the "fresh" version because it was more fruity.

This was one of the first bottles that got me hooked on sake and introduced me to Sentori.
It was a shock to me because I am of the generation that has been drinking only what we now call "classic" sake since I was young.
It has a pleasant fruit-like aroma, a balance of sweetness, bitterness and acidity, and a sharpness that is typical of Japanese sake.
I thought, "This is already white wine!
Today's sake is too delicious!
