Haneoya Ginjo Top Ginjo Trophy Winner in the Ginjo Category at IWC2021 🏆 Sweet and fruity, yet clean and crisp. One of the best! ✨😆 Nose: Light, refreshing wood acidity Taste: light yogurt-like mouthfeel, then sweetness with a gorgeous touch, bitterness and acidity coming through with the sweetness Aftertaste: Bitterness with a hint of spiciness in the nostrils. Recently, I'm starting to prefer slightly refreshing sake, and this is one of those that is sweet and fruity, but still refreshing and delicious! 🌠

Chiyotsuru, a popular limited edition sake, Keita Today we will compare it with Chiyotsuru Junmai Ginjo at the same time. Keita Nose: Light and refreshing wood acidity Taste: Deep rice flavor in the mouth. After the umami, there is a slight sweetness and acidity. Aftertaste: A slight sweetness becomes sour and a bitterness comes. Chiyotsuru Junmai Ginjo is light and gorgeous, though not of the moment. In comparison, Keita is a profound bottle that gives you a sense of the flavor of the rice.

My favorite Abe-chan's THE SAZANAMI It seems to be a new sake for the year when the rice is easy to dissolve. It's a sake that requires caution when opening the bottle, so open it gently and start with the top clear! Top fineness Nose: Mild yogurt aroma Taste: Muscat yoghurt. Bitterness, sourness and sweetness from the slight fizz. I didn't notice any bubbles on the top of the bottle. After mixing There is a small puff at the moment of uncorking. Nose: Strong yogurt and woody acidity. Taste: The sweetness, sourness, and body are thicker than in the clarified version. Is the rice malt feeling stronger? Aftertaste: A little bitterness from the sourness. It's on the dark side, but even I can enjoy it. Sweet and sour, a good bottle!

Yukinokayasha Shinshu Junmai Ginjo Namaishu A little wilder than the usual Junmai Ginjo? Aroma: Light wood acid smell Taste: This sake has a strength that is not found in the usual Yuki no Kayasha Junmai Ginjo. It has a subtle sweetness, then umami, acidity, and bitterness. Aftertaste: Gentle Kayasha lingering after a moderate bitterness. It is a namaishu with a roughness that is different from the usual Yuki no Kayasha Junmai Ginjo. If you are looking for that gentleness, it may be a little different.

I bought this bottle because a sake Youtuber said it was the best sake he'd ever tasted. I'm not sure if you can handle a bottle of sake by yourself 😣 Aroma: A bit sour and woody. Yogurt! I don't think it's too acidic. Taste: It's really thick. After the sweetness, the salt comes in. It's a little too thick for me. It's a little too much for me as a beginner. Aftertaste: After the illusion of salt from the nose, there is a light stimulation and a yogurt feeling. A Youtuber I watch works at a brewery, and he said this was one of the best bottles he's ever had, so I gave it a try! It was a little too thick for me as an amateur😖.

Delicious Yamadanishiki sake made in a small brewery in Toyama😋. Aroma: Lactic acid aroma with a hint of sourness Taste: Gentle sweetness at first, then flowing rice flavor, then back to sweetness. The taste is not fruity, but round and sweet. Aftertaste: Sweetness and umami with a bitterness. I avoided this brewery because I imagined it to be an old type of sake parsonage, but I need to change my mind! This is delicious! 😆 .
