It is a local collaboration product of that Toyo Bijin's Sumikawa Sake Brewery. It is almost Toyo Bijin! The aroma is just as it should be, Toyo Bijin Jyundai Isshu. The taste is also almost the same, but since jun-dai is not so standard, it has a clear, washed-out feel. Since I drank it after Kinjaku, it feels slightly dry with less sweetness. It's a draft sake, so expect some changes!

It has been a long time since I have been to Ganki. I think that Ganki is excellent with sashimi, so I had it with sushi. It has no cloying taste and goes down very smoothly. It has a gentle aroma and a refreshing white peach flavor, but the aftertaste is a little tangy. It is not too harsh and tasty!

It's New Year's, so we got gorgeous no.6, Yonotori, and Cosmos! This is the first time I have had Type X. It is fresh and looks like champagne. It is fresh and looks like champagne. It has been a long time since I have had Toyo Bijin. Since I have been drinking only Niimasa recently, the ginjo aroma of Toyo Bijin is a bit off-putting to my nose, but it is the very essence of Japanese sake. It has a good balance of sweetness, acidity, and spiciness. Since it is a draft sake, I expect it to evolve.

It's my favorite Amami nigorizake! It is like a Calpis soda. It's so sweet and refreshing! Amami is as vibrant and sprightly as ever! I can't wait to see how the taste changes the next time I drink it.

Amaneko...great name. It is described as sour and dry, but I didn't feel that way. I like the fruity, sugar-off muscat flavor and aroma that comes through, with a light aftertaste! It's a different type of hinotori, and a whole lot of fun!

I've been drinking a lot of Niimasa sake lately, but this is the first time I've had NO.6. It has the unique acidity and deep sweetness of a sake made from a traditional sake yeast stock, and it's so easy to drink and delicious! It is very easy to drink and delicious!

I've had a lot of otters, but this is dense. It is not clear like the usual Otters, but dense. It is indeed a raw sake. It has a sweet rice aroma, or maybe a dark peachiness. As time passed, it tightened up along with the acidity and became easier to drink.

It's a very sweet dessert wine. It's like a darker version of Viridian. It is dense like apple honey. I think the density increases in the order of Ecru < Cosmos < Viridian < Hinotori. Personally, I like Cosmos because of its good balance.

Today we compared three kinds of Kinjaku. The main one was Jungin. The first one is Jungin, which is my favorite because it is easy to drink and has a gorgeous aroma and sweetness, just like Kinjaku. The next one is Yamahai, which is the deepest and richest, although it seems to be modest. It has elegance. The last one was Nama-shu, which was fresh with just the right amount of freshness and acidity. In my mind, Kinjaku has a dense image like the honey of an apple, so I enjoyed Jungin the most.
