Ishikawa Prefecture, where our brewery is located, is a beautiful place for sunsets facing the Sea of Japan. Especially in summer, the expression of the sunset changes every day, and we never get tired of watching it at every moment. We have prepared a light, refreshing, sweet sake with an alcohol content of 12%, inspired by the twilight of summer. Chill it in a refrigerator at 5~10℃ and enjoy it in a wine glass.

Please enjoy its moderate ginjo aroma and mellow taste. According to the toji's explanation at the event, Hachinohe Shurui's "Josora" is sake brewed with soft water from the Gotoh factory, while "Hachitsuru" is sake brewed with hard water from the Hachinohe factory. There is no peculiarity of old sake, and it is very delicious with mild taste. The snack is Hachinohe's 38 canned bars with yuzu and pepper flavor.

I couldn't wait for the weather to get hotter, so I opened a bottle of Mimuro Sugi's Natsu Jun and compared it to the Dewha Kaze. The Natsu Jun has a refreshing aroma of Prince Melon? It's been a while since I had a bottle of Mimurosugi, so I had to choose between Dewha Kaze and Natsu Jun. I thought I'd wait until it got a little hotter for the summer sake, so I chose the new Dewha Kaze. It has a mild sourness and sweetness typical of Mimurosugi, and is very easy to drink as it is undiluted sake with 13% alcohol. It goes well with shime mackerel, and the sourness and fat of the mackerel enhances the sweetness and umami of the sake. It is not good with Squid Menchi because the bitterness of the sake is emphasized.
