According to the toji's explanation at the event, Hachinohe Shuzo's Nyoku is a sake brewed with soft water from the Gotoh factory, while Hachitsuru is brewed with hard water from the Hachinohe factory.
I like the traditional sake brewing, so the sourness and flavor are delicious.
