The koji used for sake is generally yellow, but this sake is brewed with black koji. This sake is brewed with black koji, and the rice polishing ratio is 96%, which is quite maniacal. This year, it has undergone a model change and has a soft, sweet and sour aroma of pineapple. Open mouth  Aroma is strong  It has a strong flavor and sweetness.  A little viscosity is felt and it spreads in the mouth.  After spreading, the alcohol rises.  The rice polishing ratio is 96%.  It was my first experience with almost rice.  It is a perfect sake without any sense of discomfort.  Maybe it is the influence of the black koji, but it has a little wild feeling.  But it is not rough, and has acidity.
