DHC Brewery comes to mind when I think of sake in the North District, but this is a different brewery. This is the first time I've had the pleasure of meeting this brewery.
Even if we subtract the fact that it is a pure sake, it has an uncharacteristic strength that is not typical of Niigata sake.

Purchased at Shin-Aomori station during a business trip to Aomori, attracted by the limit of one bottle per person.
It is dry and seems to be compatible with food. However...it needs one more push. I felt it would be better if it were not a Hachisen Ginjo.

Purchased at Isetan. The lady at the sale was so good that I bought it.
I was very satisfied with the result. It has a strong pushiness characteristic of the original sake, but it is elegant. It has a rich sharpness. The price of 2020 yen (because it was released in 2020, apparently) is a bargain.

A gift from a person in Sado Island. It is said to be a sake made by a female brewer who thought of it from scratch. 100% Koshitanrei. Polishing ratio 50%. Junmai Daiginjo. Limited edition sake.
The sweetness is sharp! Sharp and rich! A mysterious experience. Goes well with food with strong umami. Also tastes great on its own. It has a deep nostalgia. I have the impression that Koshitanrei has a "sake smell" in the latter half, but this has none.
I am sorry to say this, but 3,000 yen for this is a good price. I want people who think Niigata sake is like water to drink this.

It is described as "light", but as a Niigata native, it has a strong sweetness. It also has a hint of sourness.

For an errand to my wife's parents' house. It was sold only on Sado Island (it was exhibited at Isetan). Since I didn't want to give her something I hadn't drunk myself, I bought one for myself as well. It is dry but has a delicious flavor and is suitable as an in-between-dinner drink. It does not have that easy-to-understand, idol-like taste, but it is a sake with a rich flavor that is popular with the experts. The price is about 2800 yen. 3

Following yesterday's Koshi-tanrei, Gohyakumangoku was served. It is lighter in the mouth than Koshi-tanrei. It is like a ripe peach. It is delicious in the orthodox sense.
