Cold sake Classic aroma with a slight acidity. Drink. It has the same nuance as Niigata's Danrei dry sake. After a pause, sweetness, richness and a hint of bitterness emerge. When you swallow it, you will feel as if you are naturally stretching out your chopsticks for a snack. 40°C The base of the aroma expands. I'm not sure what I'm saying, but that's the feeling I get. Drink it. It is still a classic Niigata style. Slightly acidic. The fullness is moderate and the bitterness has increased. After swallowing, it has a bitter aftertaste that stays for a long time. 50°C Aroma of rice. Slightly yellowish rice cake aroma. Drinking. All the elements have come together well. While you are thinking this, the bitterness and the intense richness of the flavor come through. A vertical crease appears between your eyes. There is a light freshness in the back. It's delicious. After swallowing, the bitterness lingers gracefully. 60°C The sense of rice has slightly deteriorated. The aroma is a little distracting. Drink it. The unpleasant aroma is still noticeable in the mouth. However, in my experience, it also has a unique flavor. That is the melted top sugar feeling that you can faintly feel on your upper lip. It's the kind of thing that accumulates at the bottom of a coffee cup when the mixture is sweet. I felt it yesterday in Takachiyo, but it was the first time I felt it on my upper lip. When I swallow it, I feel fresh sweetness. I won't be repeating this.

After drinking a few bottles of Midorikawa, I realized that I prefer raw sake to infused sake, especially when it comes to this brewery. It's the first time I've ever seen a brand where the taste is so clearly divided between hired and unpasteurized sake.

Cold sake Pale rhumune. Nostalgic aroma. Drink. A perfect completion. I can't describe it. It's the image of Kubota's own yeast brewed Manju, laid down for a couple of years and finished with a firm and solid finish. After swallowing, the impression is different from other sakes I've had. It has a richness that lingers without being unpleasant and invites you to enjoy it with snacks. It is a sake that makes you realize once again that sake is a food wine. 35°C It is very, very pale. Morning dew gathered on taro leaves. The aroma of ripe fruit came on the wind. Drink. Really, really gentle. Everything is pale. Perfectly spherical. The way the bitterness enters and spreads is gentle and kind. When I swallowed it, everything but the happiness and joy disappeared. 45℃. At this temperature of 10 degrees Celsius, it is a little stagnant. The ecstasy level rises! Drink. All the elements have become a bit angular and assertive. Still, the balance remains intact. The same trinity as ever. The same old unquestionable. After a pause, I suddenly realized that my cheeks were hanging slackly 60°C The rice-like sensation soars. It's just like steamed rice! Drink it. It has an overwhelming sense of top sugar to the extent that it is unraveling and crunching at the bottom. And yet, it is refreshing, and the bitterness tightens the aftertaste. When you swallow it, it's no good. There are too few margins to write.

Cold sake Rice with a slightly tart acidity. Nostalgic sake Drink. Classic attack that seems to have deteriorated a little. When it settles down, you feel water for a moment, but soon you feel strong alcohol. It is refreshing and not straightforward. When you swallow it, a light green river spreads fluently. 40℃. Watery metallic smell. Not my favorite aroma. Drinking. The tongue is gently numbed. The sibilance is as if the aroma was taken from sansho. Chewing and rolling, it thins out. Intense, robust alcohol. And yet, a light bitterness and richness. I forgot the metallic smell from earlier. When swallowed, the bitterness and richness that tighten thickly. 50℃. I can't capture the aroma. A scene of akiakane Drink it. For some reason at this temperature it is as crisp as a cold sake. The bitterness, the richness, and the alcohol are still very strong. When I swallow it, my throat pops as if I'd stoked a whiskey. 60℃. Late autumn to early winter. Steam rising from a warm old house just by looking at it. Preparing dinner. Drinking. The burning incense of an oil stove. It must have been lit for the first time this year. Each element is a trinity. Pale but solid preparation for winter. Now, will it snow as much as a mountain this winter? I don't think it will repeat. Because I remember my hometown in autumn and winter, and tears overflow naturally.

How much of a correlation is there between aroma and flavour? Of the fall/winter variety in the Green River. Will we have our first snowfall tomorrow? This is the kind of sake you want to drink while imagining such things and warming your cold fingers around the stove. A sake that brings the joy of the four seasons

Sake Days at Home 2021 Summer No.7 First of all, cold sake Transparent rice. Pale fudge. Drink. Dry and piquant. So much so that you might mistake it for raw sake. Ripe kiwi-type sweetness. A bitter taste reminiscent of grape skins. When you swallow it, it is clear kiwi water. Next, 35℃. Pineapple aroma added. Drink. Canned pineapple syrup. Gently sweet, strong bitterness. Astringent enough to make it rough on the tongue. When it's tightened up and you're ecstatic, a pale richness flutters out. When swallowed, it is creamy and clean. Next, 45°C. The pineapple type continues. The wateriness flies and the acidity comes out. Drink. It is loose as if it unravels. Bitterness and richness. Trinity. I want to keep drinking it without thinking about anything. When you swallow it, you can even feel the oiliness. Ecstasy Finally, 60°C Everything is quiet and calm. Drink. Rice bran and a savoury smell of fermented rice bran as if it had been burnt. Bitterness as if the base of the tongue is retracted. On the other hand, pale rice. The warmth of the wine was unintentionally unpleasant. As I swallowed it, the expression on my face that I'd had before slipped away as if to say, "What are you talking about?" as if to say, "What do you mean? It's a lovely sake. I don't think I'll be repeating it. It is a good sake, but I still want to be adventurous.

Sake Days at Home 2021 Summer No.6 A gift from a relative Cold sake Sweet fruity Drink. Nil. Watery and astringent. Light freshness. Bittersweet. I want people who hate alcoholic beverages to drink this. Basically, it's a sake that grabs my heart, as I like to drink it warm. I learned the meaning of "Sakura" in Dewazakura. It's not just the aroma. It is bitter. It's delicious. When you drink it, it is light. Even the bitterness is light. Good! 35℃. Bitter fruity. Something that questions the back of the nose. Drink it. It is bitter and mellow. It is lightly bitter and lightly sweet. It matches the evening sun. It is a little hateful. It is delicious. When you drink it, it is rice, light rice! 50℃. Sake blower. How far will you spread? Drink it. It's light, sweet, delicious, bitter, and blows you away from the start. It's delicious. Even after finishing it, it's good. There is no sarcasm. I wanted to live a life like this. I regret it. When you swallow it, it's good! This is the trinity! Perfection! 60℃. It spreads like a boa. Astringent and sweet. Drink it. Ecstasy. Don't get too fancy. I want a classic. Don't make it any better. I want to drink in peace. It's bitter when you swallow it. Wonderful. I've been asked what I want to do next. It's frustrating. I was asked something. I'm sorry. I'm staying out tonight until morning. I don't need electricity.

Sake Days at Home 2021 Summer No.5 Cold sake It is so refreshing that you can feel the acidity. But I don't feel sourness. Drink. Gentle mango. Pale and gently piquant. Bitterness, perhaps from the carbonation. My favorite bitterness. An open feeling that opens up the back of the nose. When swallowed, it is astringent, bitter, and solidly refreshing 35℃. The green smell of summer. The sweetness of the tropics. Both extremes coexist. Drinking It has a sour taste at first. The sweetness with a little thickness soon. In the back, there is a sourness with a bitter taste. As you swallow it, you can feel a vaguely protective feeling of sake and alcohol. 55℃. Warmed sake in the severe snow Drink it. Taste and drink. A trinity. Astringency to light sweetness. Thickness. I don't need any snacks. I want to drink only this all the time. I want to drink it until I get tired of it. When you swallow it, the aftertaste is sweet. It is like a dreamy drop from Dracula 6. 65°C The alcohol of the gentle rice which stands with a buzz drink it. The attack is sweet, sour, and intense. But beyond that, it is full and delicious. It is delicious! I think that the appeal of Denyu is best demonstrated at high temperatures. It is the same with Junmai Ginjo. When swallowed, it is moist, sweet and sour. The aftertaste is fresh, sweet and sour.

I forgot to take a picture. It is 180 degrees different from the impression I had when I tasted it before. What is the impression of sake? I was questioned from the very beginning. Sake Days at Home 2021 Summer No.4 Cold sake Freshness of light comment Drink. Pineapple type piquancy. In a good way, it is not like Niigata sake. It feels sweet and perfect for summer vacation. As you drink it, it goes down still and refreshing. 35℃. Wonderful sense of trinity. Drink. Loose. Still has some piquancy. Astringency, bitterness, and a moist tropical sweetness. A sense of solidity peculiar to Yamahai. The umami spreads to the whole mouth. When you swallow it, you will fall into the illusion that you can enjoy the aftertaste alone for an hour! It's extremely brutal! 55℃. Fermented rice. Fruity like a white wine. Drink. It goes in easily, and at the moment when you may or may not feel the sweetness, the light bitterness makes you ecstatic. It also thickens and makes you want to chew and drink. It is smooth, solid, and elegant. I swallowed it and it slowly slid down my throat! 65°C Winter savory. Fresh! Pale, sweet and gentle Yamahai. Bitter and gentle. The sake version of "harsh and gentle". But sweet. Sweet but refreshing as if boiled down. When you drink it, it's fresh, bitter and astringent, good! It's badass! I will buy it again next year. It's good!

Sake Days at Home 2021 Summer No.3 Cold sake Thin muddy sake as it is. It is refreshing like cold water. Drink it. It is more than lightly nigori and less than cloudy sake. It is characterized by a strong and refreshing sourness. When you swallow it, you will be impressed! 40 degrees Celsius A bath of amazake. This is what it would be like if we had amazake flavored Basklin. Drink it. First, the sourness. It is fresh and the muddy sake feeling has been suppressed. There is little richness or bitterness, and a watery sweetness prevails. When you swallow it, you can taste the fresh bitterness and the strong alcohol taste. 50°C Milky white Basklin Drink. It is not "sweet and sour", but sweet and sour. I think it is wonderful when it is harmonized. When I swallow it, I taste sourness and bitterness. I still feel this is not harmonized. 60°C For some reason, the image is an intense purple. It is as fresh as if it had been blown up. Drink. Yellow and purple. The sweet and sour taste is harmonious. Astringency and bitterness also assert themselves modestly and are good. The image is still "intense". When you swallow it, it goes down colorfully. I was worried from the soy sauce feeling of the last Junmai Ginjo, but it was useless. It is not likely to be, but it has an exquisite nigori feeling. Good color too. Personally, I think this sake is meant to be drunk at 60°C. However, it is not my favorite sake for drinking at night. I don't think I will repeat it, but I believe this is a good sake with its own character

Sake Days at Home 2021 Summer No.2 First, cold sake The aroma is like soy sauce. Aroma of matured fermentation Drink it. Nuance of fish sauce. Unique richness. Walnut aroma. Silky rice. Bitterness and sweetness cannot be perceived unless you are conscious. When you swallow it, it is like a clear mountain stream with a summer sunset Next, 40℃. The aroma of earth. Like the sediment of muddy water. Drink. Gentle. Flavor of salt. It is not tide. The richness of the rice has come out, but the salt gets in the way, making it hard to enjoy straightforwardly. When you swallow it, it has the appearance of a one-cup sake heated on the stove in winter. Next, 50 degrees Celsius. Soy sauce as it is I drink it. After all, the soy sauce stands out. It has a pleasantly bitter taste, but... When you swallow it, you can feel the light soy sauce at the back of your throat. Finally, the soy sauce Aged soy sauce. Hey! I can't wait to tsukomi it. Drink. The soy sauce has been suppressed considerably, but the saltiness reminds me of soy sauce. If you suddenly drink it at 60°C, your impression might be a little different. If you taste it carefully, the smoky silvery powdery astringency is wonderful. When you swallow it, it is like water. Personally, it is not good. I would like to say I won't repeat it, but I already bought Usu Nigori because of the bottle design. Well, let's see how it comes out!

Sake Days at Home 2021 Summer No.1 chilled Alcohol taste comes first. Slightly sour taste Drink it. Dry taste from acidity. A little milky is mom's taste sense. Astringent fullness. When you swallow, light astringency. Like water. Begins, my summer vacation! 35°C Gently slightly fragrant. Drink. Standing rice! Loosely. A bitterness that is loose and gentle but tight. Black and white classic feeling. A nostalgic Niigata sake. When you drink it, the aftertaste that makes your heart calm down quietly. 45°C Quiet and clear. Drink it in the evening in summer when the heat is over. Drink it. Rice! This is the rice to drink! Rice that fills my nostrils as I close my mouth and roll it around so the flavors don't escape! There is nothing else to think about but the rice. As you swallow, it is quietly dry! 60°C Midnight. Alcohol in the clear. Drinking. The alcohol that comes to the nose. The richness and bitterness of the rice come right after that. It is delicious. There is nothing to say. When you swallow it, it has a light sweetness and then bitterness and richness. It is delicious! It's a good sake. The recent Saikoharitsuru is very good! I don't want to repeat it, but in a good way! Because we still have a bottle! If we didn't have it, we'd buy more! I realized that whether a sake tastes good or not depends not only on the condition of the sake, but also on the physical and mental state of the drinker. I think it's more important than the brand or specs.

Cold sake Pale, fresh, and lush. Summer vacation from today! Drink it. I've been blown away from the start! Trinity! What the hell is this drink? I don't want to tell you what I think. It's too good, too good! 40 degrees Celsius. It's soft. It's so gentle it makes me cry. Drink. A dry taste precedes it. The sweetness wraps around the bitterness to comfort the tightly packed mouth. When you swallow it, it is a gentle moment. From the real world to the slow world. I am now living in a different time from the world. 50 degrees Celsius Autumn and winter. Harvest at the foot of the mountains with autumn leaves, yellow leaves! Drink. Gentle. Gentle and thick. The richness and bitterness of the rice makes me feel like I'm about to ascend to heaven. I'm drinking it right now with my phone in my hand, but please turn off your phone and enjoy it while the dry autumn night breeze blows. Your own leisurely world is surely promised. As you swallow, your eyebrows form a c shape. Ecstasy. Your cheeks droop slackly. 60°C The aroma of baked straw in the looseness. The season is autumn. Drink. The ultimate trinity. No more words are needed. Happiness to be in the space with this sake now. Only at this moment can you obtain the breadth of mind that can accept anything. One bottle of this sake is all you need. It's a bit far from the image of Niigata sake, but that's a trivial matter.

Cold sake Fragrance of L'Erueche. Aromatic and refreshing. Drink. Fresh and dry. Deep and really, really pale! A sourness that doesn't seem to come out. The sweetness is hidden. Bitterness and richness that swells up gradually. It's delicious! When you swallow it, the bitterness and astringency that seems to be laid all over the bottom. 40°C Powder sprinkled on Japanese sweets. Powdered red bean paste. Gentle like grandma. Drink. Loosely! Loose, loose, and soft! You can feel the sweetness at the back, but the sourness and bitterness are at the front. You might mistake it for the fried bitter melon that goes with it. Pale! As you swallow, the astringency and strong bitterness are wonderful! 50℃. Almost, nothing. Slightly milky is the taste sense of mom Drink. Loosely nourished. Straw type aroma and strong bitterness. Slightly thickened. Pale sweetness as you taste it. A sense of trinity. When you swallow it, the alcohol stands up! Encore! 60°C A candle lit quietly in a kamakura. Drink. Cold sake Dull and deep. It is hard to believe even if it is said to be raw sake. Is it because a year and a half has passed since it was made? Drink it. It is a mysterious feeling. There is a habit in the lightness. It disappears without knowing what it is. It is sweet, bitter, loose, and light. The common thing with "Yuraraka" which we drank yesterday is the lightness. When it is swallowed, it is extremely dry. It cuts off quickly. And the pale aftertaste. 40°C It has a habitual aroma. Is this called "Hine-ko"? It is not my favorite aroma. Drink it. It is loose, light and sweet, but the habit of the first attack is distracting. But it disappears soon. When it disappears, the bitterness shows its head. Even if it has a habit, it is still delicious. When you swallow it, the bitterness and astringency stick to your tongue. It is delicious! 50°C Steamed rice cake. Feels like the New Year! Drinking. Trinity. Loose, fragrant, and thick. The sweetness of water chestnuts. It's delicious! I drink it like crazy, but I feel guilty that I lost to the reason why I want to chibi-chibi it. But happiness. I learn that guilt and happiness can coexist. When I swallow, the stone-paved bathhouse 60 degrees Celsius What is this deep, deep habit? Drink. Habit and mirin feeling. Not to my liking. But the pale sweetness and bitterness right after that is too sweet. When I swallow it, overwhelming ecstasy! For a moment, I hate it! And then at the end, the technician makes you melt. I've fallen into the trap! One more bottle! I want another one!

Cold sake Rice with a bit of husk remaining. It has a horniness peculiar to raw sake. Drink it. As the name implies, it is yureraka. The flavor of the rice is light but firm. It is like a fully ripe pear with 95% water content. It is refreshing yet robust. A bitter taste appears later. When you swallow it, you will feel the original beauty of the rice. 35°C Standing rice bran. The aroma alone is enough to intoxicate you with rice alcohol! This is sake! Drink it. The deep acidity stands out. From "yuraraka" to "yuruyaka". A strong alcohol feeling that pushes out the rice to the fullest. It even masks the richness. At this point, I realized that I was drinking a nigori sake. As you swallow, the dry aftertaste 50°C Intoxicated by the plump, ripe persimmon! Drink. Loose and piquant. Complex to the trinity. Rice alcohol that fills your nostrils and tingles the heart of a sake lover. Are you the nose-twitching man! When you chew and drink, you can feel your back teeth floating with the flavor. When you swallow, it's tremendously robust and satisfying! 60℃. Baked sake lees. Sai no Kami in the falling snow. Drink. "Yuraraka". I think it expresses the characteristic of sake well. Cold sake The meadow in the early morning of autumn. Mountainous area. Clear air. Drink. Loose pili. A spoiled sweet sake. Dense but not overpowering sweetness. Flavor like a model of raw sake. Ramune and pineapple syrup. When you swallow it, a refreshing breeze kicks up in your throat. 40℃. A special day in winter. Snow falling heavily and water from the snow pipe. Drink it. Loose and light. Zero corners. Perfect sphere. The alcohol fills the nostrils and thickens. Bitterness, astringency and richness. Delicious. The rice flavor is a little subdued. After swallowing, the bitterness lingers on the tongue. 50°C Honey apple with a few drops of citrus juice Drink. Loose and gentle. Adult candy. The bitterness appeals to the tongue. Cold sake This sake has the right amount of nigori for its name, Shiun. Light pineapple and kiwi aroma. Drink it. Although it is an active nigori, it is not too sharp. It has a sweet pineapple taste. It is sweet with a bitter taste in the back. It is fresh. A relaxing moment in the summer evening. When you swallow it, it is slightly dry. 35°C Lukewarm and loose, gently nostalgic pineapple candy. Drink it. The sourness is very strong. The sweetness itself is not that intense, but the sourness makes the sweetness stand out. Astringent and bitter taste. The fullness is modest. When swallowed, the alcohol stands up in the throat. Dry aftertaste. 45°C It settles to nothing. A snowy field in the mountains. Steam climbs from the exhaust of the caterer. Drink. It enters slowly and has a gentle sourness. The bitterness comes to the fore before the sweetness is felt. There is also a powdery taste. When swallowed, loose water. 60°C Tropical ripe fruit feeling. Couldn't capture what it was. Drink. Light and smooth. Beautiful and clean. Mango acidity dominant. Some sweet nuances, but I can't find them. Slightly thick. Fullness in the back. Calm astringency as you swallow. To describe it like a fashion magazine, it's basic, but with an "off" technique. And retro. A strange sake that is ordinary but not ordinary. I'm not thinking of repeating it at the moment.

When you swallow it, it disappears, leaving a pale astringent taste on your tongue. 45℃. Laundry washed without detergent. The season is late November Drink. Loose. The pallor is suppressed and the fermented rice explodes. Steamed straw, richness and bitterness that even feels greasy. The feeling of the nostrils being filled with flavors is ecstatic. When you swallow it, you feel festive with the rich rice. 55°C Quiet hot water and powdered milk Drink it. It is a light and sweet Chitose candy. It is good that the milky feeling is not too overpowering. What will happen at 65℃? When you swallow it, you can feel the richness of rice. The rebellious boy who came to rebel in the 5th grade 65°C 5 minutes after turning off the fire Drink it. It is fragrant and pale. Bitter and pale. It has a light sourness and a light sweetness. The aroma that rises to the nostrils is also light. When it is swallowed, it is as pale as spring water. It is associated with Takachiyo because it is Takachiyo Shuzo. However, the paper box design does not let you associate it. If you prepare for it, you will be hit by the gap in a good sense. At any rate, it's a definite repeat. I like it more than Takachiyo and Takachiyo. I'm going to Niigata one more time next week. The keyboard is "pale". Pale pastel love, here you go!

Cold sake Straightforward rice aroma. Warmth is felt in the aroma. Drink. Salatul. It is refreshing but has a strong alcohol feeling. Because it is from Yamanashi, it has a sweet taste of grape barrels. Astringency of tannin when swallowed. The back of the tooth is rough. 40°C The night is quiet and deep. Snowy landscape around. I drink it. It enters lightly and softly. Immediately after, the bitterness and the richness are quite strong. Numbness on the tongue. Heavy as if boiled down. As you swallow, heavy like a high alcohol hot wine, tannins are astringent. 50℃. Iron smell. Railroad rails after the rain Drink. Slowly. Soon it mellows out. Sweetness, astringency, tannin and richness as the alcohol intoxicates the nostrils. As I swallowed, I felt the richness of the egg yolk 65°C. Cold snow. Why the faint huckleberry feeling? Drink. It is square and hard. If there were charcoal made from persimmon trees, it would smell like this. Gentle fragrance. Richness with acidity. It is halfway between refreshing and sticky. It feels as if they are separated instead of harmonized. When you swallow it, the sourness and the new metallic nuance go through the nose. This is the first time I felt tannin in sake. Is it because it is a sake from Yamanashi? I think the appearance temperature of the aroma is high. The image is 90% sake and 10% white wine. I'd like to say I won't repeat it, but I've already bought two other kinds. Well, what do you think?
