Drink. Pineapple type piquancy. In a good way, it is not like Niigata sake. It feels sweet and perfect for summer vacation. As you drink it, it goes down still and refreshing.

Drink. Loose. Still has some piquancy. Astringency, bitterness, and a moist tropical sweetness. A sense of solidity peculiar to Yamahai. The umami spreads to the whole mouth. When you swallow it, you will fall into the illusion that you can enjoy the aftertaste alone for an hour! It's extremely brutal!

Fermented rice. Fruity like a white wine.
Drink. It goes in easily, and at the moment when you may or may not feel the sweetness, the light bitterness makes you ecstatic. It also thickens and makes you want to chew and drink. It is smooth, solid, and elegant. I swallowed it and it slowly slid down my throat!

Winter savory. Fresh! Pale, sweet and gentle Yamahai. Bitter and gentle. The sake version of "harsh and gentle". But sweet. Sweet but refreshing as if boiled down. When you drink it, it's fresh, bitter and astringent, good! It's badass!
I will buy it again next year. It's good!

I'm just guessing, but I think Takanoi Brewery uses a different yeast for this sake.
Niigata's sake! But this sake overturns that image! Good!
