Sake Days at Home 2021 Summer No.7
First of all, cold sake
Transparent rice. Pale fudge.
Drink. Dry and piquant. So much so that you might mistake it for raw sake. Ripe kiwi-type sweetness. A bitter taste reminiscent of grape skins. When you swallow it, it is clear kiwi water.
Next, 35℃.
Pineapple aroma added.
Drink. Canned pineapple syrup. Gently sweet, strong bitterness. Astringent enough to make it rough on the tongue. When it's tightened up and you're ecstatic, a pale richness flutters out. When swallowed, it is creamy and clean.
Next, 45°C.
The pineapple type continues. The wateriness flies and the acidity comes out.
Drink. It is loose as if it unravels. Bitterness and richness. Trinity. I want to keep drinking it without thinking about anything. When you swallow it, you can even feel the oiliness. Ecstasy
Finally, 60°C
Everything is quiet and calm.
Drink. Rice bran and a savoury smell of fermented rice bran as if it had been burnt. Bitterness as if the base of the tongue is retracted. On the other hand, pale rice. The warmth of the wine was unintentionally unpleasant. As I swallowed it, the expression on my face that I'd had before slipped away as if to say, "What are you talking about?" as if to say, "What do you mean? It's a lovely sake.
I don't think I'll be repeating it. It is a good sake, but I still want to be adventurous.
