Cold sake This sake has the right amount of nigori for its name, Shiun. Light pineapple and kiwi aroma. Drink it. Although it is an active nigori, it is not too sharp. It has a sweet pineapple taste. It is sweet with a bitter taste in the back. It is fresh. A relaxing moment in the summer evening. When you swallow it, it is slightly dry. 35°C Lukewarm and loose, gently nostalgic pineapple candy. Drink it. The sourness is very strong. The sweetness itself is not that intense, but the sourness makes the sweetness stand out. Astringent and bitter taste. The fullness is modest. When swallowed, the alcohol stands up in the throat. Dry aftertaste. 45°C It settles to nothing. A snowy field in the mountains. Steam climbs from the exhaust of the caterer. Drink. It enters slowly and has a gentle sourness. The bitterness comes to the fore before the sweetness is felt. There is also a powdery taste. When swallowed, loose water. 60°C Tropical ripe fruit feeling. Couldn't capture what it was. Drink. Light and smooth. Beautiful and clean. Mango acidity dominant. Some sweet nuances, but I can't find them. Slightly thick. Fullness in the back. Calm astringency as you swallow. To describe it like a fashion magazine, it's basic, but with an "off" technique. And retro. A strange sake that is ordinary but not ordinary. I'm not thinking of repeating it at the moment.
