It has been a long time since I have been up. First time entering a liquor store in a neighboring town. I knew it existed and had been planning to go there someday since I got into sake. The selection of sake is not the same as at my local liquor store or the liquor store in another neighboring town, so it's fun just to look around. There are so many brands I want to try, but I'll try to control my greed. I bought a kamosu mori and a mini mini otter. I opened a bottle of kamosu mori. Nice aroma (I'm not good at describing aroma, so it's a bit of a mess). The first impression of the taste is that it has a good amount of schwash, and the sake flavor is relatively low, making it easy to drink and delicious! The 14% alcohol content also makes it very easy to drink. I would like to repeat this again, thanks for the treat! ★★★★

Bunkajin辛口純米酒

Bunkajin purchased together with Jyukyu. I've always been partial to brands from the Tohoku region, so I'm exploring! I had a choice between Junmai Ginjo and this one, but I prefer the taste of rice flavor and sharpness, so I went for this one! I opened the bottle immediately. It smells fresh and fruity, but I can't be sure exactly what it is. When I drank it, I felt sweetness, umami, acidity, and carbonation all rushing toward me at the same time! It claims to be dry, but my impression is that it's not that dry. It's good, it's Swiss... ★★★★

Purchased at Marumasa Sake Shop in the next town over. A cute hedgehog label caught my eye. There are only two stores in the prefecture that carry this brewer's sake. I bought it. I am not aiming to conquer the whole country, but I am one step closer. I immediately opened the bottle. A fresh and nice aroma...(I don't know what kind of fruit it is!). Fruity aroma on the nose and a tangy carbonation on the tongue! Delicious! It is very similar to the Nichiranda that I uploaded before. The difference is that it is a little lighter and less ricey than Hiwada. I think women would like it more than men. Thanks for the treat! ★★★★

It is a regular place where we settle down for some reason. The snacks are salted squid made with Daiginjo sake lees and furofuki daikon radish. Let's work hard again tomorrow!

This is one of the limited-edition "Kokoro Series" by a young master brewer of Zao Sake Brewery. The label is nice. I took a sip. The aroma is subdued, and the spiciness is stronger than the sweetness, but the spiciness also seems to be going down smoothly. It goes down fast! I'm going to keep it for now and have it with sashimi or grilled fish next time! ★★★

HidakamiDaccha 純米吟醸

Mino
Hidakami's Daccha is made from "Gin-no-Iroha" sake rice, which was born in 2020 in Miyagi Prefecture. The name "Daccha" comes from a typical Miyagi dialect Daccha", a typical Miyagi dialect word (in my opinion, but I am sure it is true). If you look closely at the crescent moon on the label, you will see that it says, "If you want to do it with fish, it's Hidakami Daccha. I took a sip. The aroma is subdued, and the taste is like a small wave of sweetness and sourness that comes in at the same time and then disappears in a big wave. It would be a shame to drink it without snacks. Unfortunately, there was no fish today, but stewed squid and daikon radish, and salted squid. Still delicious, though! I will keep it for next time's fish. ★★★

At a certain inn in Yamagata Zao Onsen. First of all, fruity! (I don't even know which fruit flavor!) And then a hint of sourness and exquisite sweetness! This is what I mean when I say I can drink it easily. Delicious, thank you. ★★★★

Purchased at an in-house auction. I tried to drink it right away. What is it? It's so soft on the palate! I don't know what the aroma is, but it is fruity! After that, the rich and thick umami flavor spreads out, while at the same time, the sharpness is smooth and flat until the end. I have only been brewing for a short time, so I didn't know about this, but I looked it up and found out that it is made from "Omachi" sake rice. I see...no wonder I'm an omatist when I learn about this flavor. Delicious! ★★★★

I have the impression that it is fresh and sweetness is more assertive than umami. Consistently delicious! But I still prefer the special junmai. ★★★★

Its unique umami is moderate compared to that of Shinkame and Bonbu, and it is a type of sake that can be enjoyed by everyone. The comparison of umami levels is as follows. Hikoson <Shinkame <Bonbu I have the impression that Hikoson has a very strong umami. The Umami of Bonbu is very strong, so there seems to be a clear difference between liking and disliking it. Personally, I prefer Shinkame. Thank you for the food! ★★★☆

The taste is similar to the TABAYASHI we compared, with the umami and sharpness coming at the same time at the beginning of the drink, but this one has a longer sharpness aftertaste. It's fun to compare! ★★★☆

The moment you put it in your mouth, the umami and a good sharpness rush toward you at the same time. The sharpness quickly disappears, leaving behind a lingering aftertaste of umami. It is delicious! Highly recommended! ★★★★

I came home after a night shift and took a sip in the morning. I got the impression that the umami followed the sharpness of the sake. Thank you! ★★★

This is another Yonetsuru Junmai-shu, a personal gift from Yamagata Fireworks. It gives the impression of being sweet. It even introduces dishes that go well with it, so I will try it from now on. ♪★★★☆

Records. Junmai sake from Kariho. No photo because the bottle was discarded. I forget, but I think I bought it together with Kagatobi. I think it was easy to drink and standard impression. Thanks for the drink. Thank you.

Purchased at a local liquor store chain. Personally, I don't find it so dry as to be super, and the flavor is delicious with just the right amount of umami and sharpness. Thanks for the treat! ★★★

Aged sake found at a local liquor store chain. This is the kind of sake I've come to expect. It has a very rich rice flavor and gives the impression of being really matured. Thanks for the treat! ★★★
