Hidakami's Daccha is made from "Gin-no-Iroha" sake rice, which was born in 2020 in Miyagi Prefecture.
The name "Daccha" comes from a typical Miyagi dialect
Daccha", a typical Miyagi dialect word (in my opinion, but I am sure it is true).
If you look closely at the crescent moon on the label, you will see that it says, "If you want to do it with fish, it's Hidakami Daccha.
I took a sip.
The aroma is subdued, and the taste is like a small wave of sweetness and sourness that comes in at the same time and then disappears in a big wave.
It would be a shame to drink it without snacks.
Unfortunately, there was no fish today, but stewed squid and daikon radish, and salted squid. Still delicious, though!
I will keep it for next time's fish.
