This sake is made by a sake brewery called Popular Sake Brewery in Nihonmatsu City, Fukushima Prefecture. This brewery uses traditional methods, making only ginjo-shu and only by hand. This is the first time I have encountered it. What kind of sake is it? It is not gassy, but has a sweet ginjo aroma. Let's try it! Oh, it has quite a lot of acidity. It's a fruity sake with a nice mouthfeel. Perhaps because of the acidity, it has a clean aftertaste. It is not too sweet and has a nice mouthfeel. ‼️ You can have many glasses of this!

I told the owner of the sake shop that Koshi-san has a unique name, but last year it had a different name. He said, "Last year it had a different name. Maybe Byakuya was the one? I don't think it's a good idea to change the name so often😅. I opened the seal, poured it into a boar's mouth, and smelled it...it has a sour aroma! Now, let's drink it. What is this? I have never seen such a sake degree of -64. It also has an acidity of 10.5, which I have never seen before. It is really Crimson Red, as it is made with red yeast! The liquor store also said that it has a Sake degree of -64, but it doesn't seem so sweet because of the acidity. That's exactly what it is. ‼️ It also has a low alcohol content of 9.8 degrees. This is my first sake from Ikedaya Sake Brewery. It has a high alcohol content of 17 degrees. It didn't smell so much before drinking, but it was acidic and tingling. After drinking it, there was some kind of fluffy aroma that passed through my nose: ❗️ I think I would get drunk if I drank it in small gulps, so I drank it in small gulps. I will check out more sake from Ikedaya Sake Brewery in the future. ‼️
