When poured into a vessel, it produces fine bubbles and looks like a slightly sparkling wine. The mouthfeel is easy to drink with a great balance of sourness and sweetness.
This is an old-fashioned doburoku made by Yanagawa Shuzo. It is said that they reproduced the manufacturing method of the Warring States period. It has a strong sour taste.
I was recommended to buy it at the shop because it is hard to get in Tokyo. Yoshida Shuzo brewery is located in Eiheiji town, and it seems to go well with vegetarian food.
