Everything I find from Shuhari I really enjoy. Am I being influenced by the branding and experimental feeling? Maybe. But it’s also the brewery to make me think again about Kyoto sake. This is interesting, maybe intellectual sake? Light but not too direct, fun to drink. Enjoyed this with pizza from Jiyugaoka’s best, Pizza17.

This sake was interesting and complex, but did I like it? The initial impression was almost like sherry or an aged sake. The method of making this is meant to be representative of an ancient technique. I bought this bottle in Kyoto and stored it outside of the refrigerator- maybe I didn’t taste it at the peak? I wanted to like it more than I did.

This was a beautiful and elegant sake. Full but not overwhelming. Everything I’ve tried from Mimurosugi has been exceptional and this did not disappoint. It’s funny, I thought my favourite sake type was modern, craft sake but I think I was wrong...
Tenbi純米吟醸にごり酒

My second bottle of Tenbi, and I was lucky to try this spring sake. I paired it with some pate and cheese. I was expecting a very sweet sake but was pleasantly surprised. It was refreshing with only a little sweetness. We tried it reasonably cold and then at room temperature. Recommended!

I bought this sake in Onomichi. I haven’t found the sake that I love in Hiroshima, and this one also isn’t it. As the label suggests, it’s very, very dry. I had put it in the fridge, and perhaps also tried it too cold. Next, I’ll try warming it. Please give me recommendations for other Hiroshima sake to try!

I was excited to buy the Hario collaboration set. This was a sake I had enjoyed before and was not disappointed. I tried using a new tokkuri with an insulation sleeve, and this was a nice way to enjoy the sake and sample as it cooled slightly. My feeling is that the Alpha Series is such a strong innovative brand but this will be the last bottle I buy for some time... it feels to me now like a great entry point and I want to explore different styles.

After trying a delicious nama sake from this brewery, I was happy to discover that I had this bottle in my collection! I love Nara sake and this is a wonderful example. Full-bodied and spicy. A nice match for what might be the last nabe of the season. I’m looking forward to trying more.

So. A sake made in France is an interesting proposition. And the branding and design is very attractive. This was a sake I was ready to like! But for me, the flavour was not there. I made a mistake in pairing this with a nabe that was spiked with yuzu, thinking that the citrus flavour would complement. On first pour, the taste was thin with a yoghurt tang. As it warmed up to room temperature, the flavour became slightly fuller but never really developed. This was a sake I had only one glass of.

This sake was enjoyed at Fukuyama’s amazing sake bar Koke. It was a recommendation based on my love for sake from Nara. This felt like a very special sake to be able to try. I have never seen a nigori behave quite like this one. The flavour was developed and rounded. Absolutely enjoyable and not too sweet. The profile was sophisticated.

Light and refreshing, I enjoyed this sake with leftover Thai food. It was nice with the spicy food. This sake with Amabie hopes to promote the swift exit of the coronavirus. I can raise a toast to that! It’s a strong label design and a good cause.

This sake has more bite than fizz. The initial notes are on the sour side but it balances out quickly, in fact becoming a little too sweet. It would be nice in spring, but I didn’t feel like I could drink a lot of it. It might be best to work with the sweet taste and pair with fruit or even dessert. On a side note, I’m curious. I often see sake from this brand but can’t find it in the app, and it’s not listed in the Koichi producers. Does anyone know why?

I was expecting a bigger flavour from this sake. It was surprisingly delicate and slow to develop. I tried it with some hard sheep cheese and it was overpowered. I let the bottle come up to room temperature and tried another glass which I enjoyed a lot more. I felt this was technically accomplished but maybe lacked a bit of excitement? Maybe the small bottle format didn’t help. I’ll try it again in summer with some lighter food.
