Anyway, it is sweet and mellow. It tastes like a white wine. It may be liked or disliked, but I like it very much. I think it will taste even better with pairing.
Natural yeast. The sourness and the umami are both strong, and the taste is quite unique. It can be enjoyed with strong flavored dishes. The sake itself has a slight yellowish tinge.
Fragrant sparkling. Sweet, with a lingering rice sweetness on the finish, I thought it would have a long aftertaste. It is said to be a second fermentation in the bottle, without gas filling.
Sowing Autumn. It is limited to the fall. Since I had it cold, I felt it was a dry and crisp sake. The fragrant lactic acidity comes through to the nose.
