Hana no Ka産土 2021 山田錦
モリThe much-talked-about productive soil. I was fortunate enough to get a re-release from the online store of a special distributor.
It was quite gassy and cloudy with a little bit of briquettes in it. The aroma was quite subdued. The taste is also mild and low alcohol, and combined with the sense of gas, it gives a quite refreshing and gentle impression. However, the balance of umami, sweetness, and sourness is excellent. It can be drunk on its own or with a refreshing meal such as sashimi.
I think it is similar to Moribari from Matsumoto Shuzo in Kyoto. Mr. Hidehiko Matsumoto also went to Hananohana Shuzo for his training, so I guess they share the same philosophy about sake.
Of course Moribari is delicious right after opening the bottle, but I like it better the next day when the taste is more relaxed. So I thought I'd try the Sando the next day, but it was so good that I ended up finishing the whole bottle (lol).
I was also able to make a reservation for the Homasu that will come out in February, so I'm looking forward to that.
