After Miyamanishiki, Morishima's Yamadanishiki was selected. The aroma is fresher, the rice is sweeter and fluffy, and the taste is clean but the sweetness remains. My mother thought it was dry because of its freshness.

Fresh, as is typical of nama-shu. Alcoholic taste at first, but the umami and bitterness quickly disappear. Perfect for a mid-meal drink. Personally, I would prefer more sweetness from the rice, but I guess it would interfere with the meal.

Miyamanishiki (unfiltered sake) was so good that I went back on April 1 to try the last sake of this spring. It was dry and refreshing with a strong umami flavor. I found Daiginjo at Costco for about 2,000 yen. The aroma of melon or banana is said to be the main selling point, and it is true that it has a faint aroma and a unique sourness. I didn't know there was such a nice brewery nearby. The main building was built at the end of the Edo period. I had a glass of Miyamanishiki sake. It has a slight aroma and flavor. Odawara is purchased at Suzuhiro, a kamaboko shop. I hadn't had sake for a long time. It has a sweet taste and is easy to drink. It was delicious with kamaboko as a snack.
