Miyamanishiki (unfiltered sake) was so good that I went back on April 1 to try the last sake of this spring. It was dry and refreshing with a strong umami flavor. I thought dry sake might have a strong alcoholic taste, but it is not like that at all. Rice:100% Miyamanishiki produced in Nagano Polishing ratio: 55 Yeast: No. 9 Sake meter: +7 Acidity: 1.6
