I bought this at Daishinshu Sake Brewery during a fishing trip to Nagano.
It is fresh and full-bodied, with a pleasant sweetness that is not sticky, and a slight bitterness that lingers in the aftertaste.
I could not taste any acidity.
This is delicious.
I'm drinking it with seasoned herring roe pickled in sankai (sea herring roe) that I bought at Tsuruya.

We got some delicious stonefish and duck, so we opened it.
It has a smooth but banana-like sweetness. The deep bitterness in the back of the throat cancels out the fat from the sea bream and duck.
It was a sake that could also be used with leatherfish liver. Thank you for the sake.
The sake had the fullness and aroma of a Junmai Daiginjo, but was easy to pair with a meal. Delicious!
We are having it with sea bream sashimi we caught, homemade salted salmon roe, and roasted sake with a hint of plum.

I had it cold with sea bream, striped horse mackerel, and amberjack sashimi, but when it gets a little colder (the opposite of cold) I would like to try it hot with ankimo or yudofu (tofu), so it will stay in the fridge for now.

The aroma is not too strong and elegantly balanced with a clean aftertaste, making it easy to pair with any dish.

It is a full-bodied, sweet sake that would go well with blue cheese. The sake is not too strong, so it could be served with either yakitori tare or shio (salt).

The clear and pure taste without any clutter was enjoyable, and its fruity aroma like ripe fruit and softness on the palate were impressive.
It was an excellent match with meals, and went very well with tuna and sea bass sashimi.
