There is no acidity, but it is a very beautiful sake. It is not too sweet, so you can gobble it up. You can feel the goodness of the water and it soaks into your body.
There is no doubt that it is a delicious sake, but its character has faded a bit. The sweetness and acidity are subdued, giving the impression of more emphasis on balance.
I think it has become more balance oriented.
It is described as nigori (nigori sake), but it is really just a bit of ogara (a hint of ogara). The taste is generally as described on the label, and it is delicious.
The acidity is not as strong as other Eiko-Fuji wines. I thought it was best to drink it at a slightly warmer temperature, not at a very cold temperature.
