Tenbi Shinshu Junmai Ginjo Nigori Nama
This is the first nigori version of the familiar Tenbi.
While retaining the good qualities of Tenbi, the balance of flavors is as good as ever. I admire the toji's efforts.
As a side note, I accidentally stored it on its side in the refrigerator, and it overflowed a little into the cabinet. Please be careful when you store it.

Slightly foamy sake.
The flavor is a mixture of acidity and sweetness. It has a fruity taste like muscat.
It has a lot of flavor on its own, but it can be a little stubborn if you keep drinking it. It's perfect with food.

It was delicious at the beginning of the boom, but the taste seems to have changed when it became possible to drink it anytime... It is easy to drink, but the depth of the taste is not felt.

I didn't know about this sake.

SOGAPER EFFIS Ilya Thornton
This is my second bottle of Soga Pale Efis this year.
My favorite kind of sake. Among them, Ilya Thornton is new to me.
It was recommended to drink it before the end of July, so I finally took it out of the fridge and opened it.
It is a little sweet, and the full flavor spreads in the mouth. Drinking it in a wine glass brings out the flavor more. Personally, I prefer the Saké Erotique.

Tosa Shiragiku Namazume Junmai Ginjo Gin no Yume
A moderate sweetness that is not persistent.
It has a nice aftertaste that slips away easily. It is made from Gin no Yume rice grown in Kochi Prefecture, but I prefer the one made from Hachitanishiki rice grown in Hiroshima Prefecture.

Toshou Junmai Ginjo
The brand name is not registered, so it is newly registered.
Apparently, it is a brand that Sagara Shuzo in Tochigi reissued to commemorate the 190th anniversary of its founding.
This Toshou was sold for about 20 years from 1980's.
It has a soft and slightly sweet taste.
It is not so assertive and fluffy. The impression that a slight sweetness lingers a little in the mouth.
My preference is 3.5.

This is a gem of a sake produced by a female toji named Fujima Miki.
The fruity flavor is skillfully complemented by a weak effervescence. Extremely high quality and high dimensional balance. It is delicious.
