Drunken Garden in Azumino, Shinshu. I was curious to buy it because it is 59% Hitogokochi, a Nagano Prefecture sake. As the label says, it is a refreshing sake with a delicious flavor. It is not at the top level of popular Nagano sake, but it has a glimpse of Nagano's sake character.

Rooster Yoemon from Kawamura Sake Brewery in Hanamaki City, Iwate Prefecture. This sake is famous for its sour taste, which is rare in Iwate Prefecture. I drank it for the first time at a store in Hanamaki and was surprised by the sourness. It seemed to be quite a challenge since Iwate is generally known for its sweet and tasty sake. Even so, I heard that the owner stubbornly continued to make sour sake. (^○^) Nowadays, with the Shinsai boom, Yoemon's sour sake is also selling well, especially outside of the prefecture. Rice used is unknown. According to the owner of the sake shop, the sake is aged for three years, but there is no strong sense of aging, and it is a dry junmai-shu with a good acidity. It is a dry junmai-shu with a lot of acidity. The sweetness that spreads fluently and the spicy astringency in the latter half are very unique. After a few days, it becomes more crisp and easy to drink. For my taste, I'd like to have more of a woody or smoky flavor. Either way, it's not a type that will appeal to everyone. The mainstay of this brewery is Yamahai brewing, so it will be interesting to see how peculiar it is.

This is the fifth brewery in Saku's sake brewery series. This is a rare bottle as it has recently met with a fire and is closed. We happened to find it at a one-day spa and secured it. It has a strong bitterness and acidity, with a tangy mouthfeel. It also has a sweetness, so it is not harsh. It is the best sake from Saku so far. It's a shame that we won't be able to taste it for a while. I hope they will do their best to bring it back.

Good evening, it's Shamrock, a parallel world from Manazuru in our first series ☘️☘️☘️. Not a Yotsuba, but I'm opening this bottle to pray for Japan's 🇯🇵 soccer team to win tonight✨ It has a sweetness that is typical of rice, lactic yogurt and acidity, and is delicious 🐴🐴🐴🐴, but it has a high alcohol spiciness on the back end that makes it very drinkable. I had a puku puku brew the other day. I think it is similar to the junmai sake I drank the other day from Pukupuku Brewing (that one is Koshihikari) 🤗. I heated it up to lukewarm to try it out and it doubled in flavor 😋.
