Here is a story from last week. A liquor store in Kobe had 807 of Yumachi! Yay! It didn't smell like Aizan or Rohafu. It has a hint of banana and melon, but it is lost in the sizzling acidity. Compared to the clean Yamadanishiki, the Omachi has a wild impression. Like the dewy leaf wind, it has a complex flavor that is quite good! Then there is Akitsuho 807. I would definitely like to try it! Kaze no Mori is an interesting sake as well as delicious! *This is the second day. It smells as bonded as ever. Fun~!

Naruheso! Kaze no Mori 807 series. We had Aizan, next was Rohafu, and this time it was Yamadanishiki. Very interesting! They are totally different! I had a strong impression of the Dew Leaf Breeze, but the Yamada Nishiki is dry. It is light. But it sure is delicious! Unfortunately, there was no Akitsuho.... I haven't had Omachi either. It's not easy to get it. However...! It's very fun to compare the tastes!

The 100th commemorative check-in is "Wind Forest"! Last time we had 807 of Aizan. Today it is 807 in the dewy leaf wind. Very interesting! It is indeed different. This dewy leaf wind seemed more powerful. I want to compare them all! Next up are Yamadanishiki and Akitsuho! I am sooooooooooooooooooooooooooooooooooooooooooooooooo looking forward to it!

Snoclet drinking comparison Yamadanishiki version 📝. Every year when Snoqualmie is released, I've always wanted to compare them, and this year I got to do it ✨. The first one was Yamadanishiki, which I managed to buy after going through the Oomune's solicitation for a strong sake 💧. As you can imagine from Yamada Nishiki, it's not too sweet and flows smoothly 💨. It's dry, so I drank it with sashimi and it went down a treat 🐟. 720 mL ¥ 2,063

The sweetness comes, but the bitterness comes quickly and seems to clear out. Kaze no Mori no Haru yo koi, Daisune's limited edition sake for the year-end and New Year's holidays. I told them I would make a reservation, but they told me I didn't have to go that far to get it. When I visited there later at the end of the year, I was able to buy it easily. I don't think they made a big announcement about this season. Personally, I was more impressed with the bitterness this year, so the dewy leaf style was more delicious 💧. 720 mL ¥ 2,046

Sweet nutty and smooth on the tongue. Alcohol slips through the nose. A little alcoholic, perhaps because it's a little high in alcohol content. There may be a little oily magic aroma. I went to buy Shiki, but for some reason I left the store with a bottle of Furozumi Jusui in my hand 💧. The owner seems to think I like Yamahai and only drink the sticky type. The owner of Dasong told me to take my time and enjoy the taste change 💡 over the course of a month and a half. 4/25Swirling, a little cherry aroma sourness and bitterness clinging to the tongue. But refreshing, tastes young. 5/19The fullness has increased and the crispness has decreased, but it has become rounder and the acidity has been reduced. Purchased at Daisou as well as Shunshin. Mai-bijin has an image of a very sour, interesting and strong sake, which I drank only once in the past. It only says "Junmai" but it is a 40% polished Daiginjo specs, and although it doesn't say so, it is said to be a draft sake. I knew it was very sour because I tasted it. I thought it was dried plums. I thought it was a dried plum. It's like Pocari or grapefruit. I know it's not to everyone's taste, but I personally love it.

On the way home from watching the exchange game, I went to a liquor store that I don't usually visit very often. The owner is very passionate and I would like to visit more often 🙄. Sake no Omune is located between Settsuhonyama and Aoki stations. They carry a wide variety of brands, from well-known brands to brands known only to those in the know. The brands they carry are Kaze no Mori, Koei Kiku, Yokoyama, Laughing Four Seasons, Miyako Bijin, Furozumi, Okura, Toyoga, Yuraku, Zuikan, Raku no Se, Hanashimi, Etsukaijin, Shunshin, Komatsunin, Maibijin, Shikishima, Nihon-Soul, Bunkajin, Asahikiku, Takashi, Tanzawa, Duan, Souhyo, Sogen, Okuharima, Chiyodakura, Takezumi, Katano Sakura, Hachibei Sakaya, Sankotenkai, Kaiun, Shidaisen, Zanso Hourai, Akiga, Hosui, etc. When I asked what sweet sake was available at Shunshin, this was the one I was told. I asked him if he had any sweet sake at Harushin. I asked him which sake was sweeter in Harushin, and he said "Mizuhashiroshi" which is also sweet but has a habit of sweetness. It is made with yeast that produces high malic acid. It is sweet and sour and sweet and spicy. It has a sake strength of -18, but it is also very dry, so even those who like dry sake can enjoy it. It is a strong sake, so it is suitable for warming up. It seems that mizu-hashiroshi has a habit, but I think this sake is also very good. I think it is a sake for different people 🤔. The specs alone make you think it's sweet, but it has a complex flavor. There was also a sake made with Shunshin beer yeast but it cost almost 3,000 yen 😅.

It has a rich nutty aroma, but pulls away with bitterness felt all over the tongue. It is like a thicker version of Raifuku's Fulpon. The day before, I went to Awaji Island, but the brewery of Miyako Bijin was closed on Sunday, so I gave up and went home. The next day, I happened to go to Omune and found three kinds of Miyako-bijin. After listening to the owner carefully, I bought two bottles, one for a bird and one for a rabbit. I thought I would like to keep it on hand because it is a Yamahai sake with a strong flavor and it matches very well with meat dishes and Chinese food, and it goes well with dishes that have a strong flavor. 720 mL ¥ 1,750

It was pithy and lightly sweet, with a slight alcoholic bitterness that flowed smoothly. The bitterness was less pronounced in the Wind Forest, and the sweetness was elegant and quite to my liking. After receiving information from bouken, I went to Omune at the end of the year, but they were sold out. I asked the proprietress about it, and she said they would have a small quantity in stock at the beginning of the year. The rice used for the sake seems to change depending on the year, but this time it was a Junmai Ginjo of the dewy leaf style, which had less rice clutter than the regular Kaze no Mori, and had a very good balance of umami and bitterness. The aroma is strong. The mouthfeel is mellow and a little rough. The taste is sweet, rich and complex with a firm acidity. It has a long finish with a lingering flavor that makes it hard to stop even without an appetizer. Mature sake.
