It was pithy and lightly sweet, with a slight alcoholic bitterness that flowed smoothly. The bitterness was less pronounced in the Wind Forest, and the sweetness was elegant and quite to my liking. After receiving information from bouken, I went to Omune at the end of the year, but they were sold out. I asked the proprietress about it, and she said they would have a small quantity in stock at the beginning of the year. The rice used for the sake seems to change depending on the year, but this time it was a Junmai Ginjo of the dewy leaf style, which had less rice clutter than the regular Kaze no Mori, and had a very good balance of umami and bitterness.
