I will enjoy it while reminiscing about the scenery of my trip to Kansai 🍶.
When I opened the bottle and poured it, the aroma was gentle, clear, elegant, and reserved.
The mouthfeel is pure and clean. As you savor it, the sweetness and umami of Yamadanishiki, which gives the impression of grain and freshly cooked rice, spreads gently.
The mellow, concentrated taste of spicy, acidic and astringent aroma emerges. However, it is not too assertive, and the lingering astringent taste is left behind as it is quickly lifted up!
It has the richness of flavor typical of Osaka sake. The richness of flavor typical of Osaka sake and the elegance typical of Jun Dai sake. It is a delicious taste with a pleasant power balance ✨.
We also got Fukuoka's famous sweets at the same time!

This week, I had a sudden urge to drink Katano Sakura after reading your post on Sake-no-Wawa, so I hurried to a local liquor store!
So I went to the local liquor store to get a bottle of Katanozakura by Yamano Shuzo this week.
This time it was Aizan!
Let's start with the sake.
First, the aroma. It has a unique aroma!
In the mouth, it has a fruity sweetness that is not too sweet, followed by a bitter taste that slowly fades away.
The lingering taste is a gentle bitterness with a pungent spiciness that is well balanced.
The unique aroma that passes through the nose is also a good match with the flavor. Is this a sake yeast yeast yeast yeast yeast yeast yeast?
It is delicious with a slightly dry and rich taste.
The impression does not change much even if it is served with a meal.
If you warm it up to lukewarm, you can feel the bitterness and the alcohol.

I drank it over a period of 3 days, but the impression did not change much as time passed, and the taste remained stable.

Sweet body for a kata no sakura, but bitter chocolate at the end. It's also alcoholic, so one glass or so is just right.
Purchased at Yamano Shuzo's brewery opening. Lightly cloudy. The aroma is light and refreshing, and the taste is good. If you drink only the supernatant, it is a little unsatisfactory, but if you drink it with nigori, it is good.
It is a little spicy and tasty, and it goes down your throat nicely.
Junmai Unfiltered Nama Sake
It is a combination of all my favorite kinds of sake.
I was getting a little tired of the freshness of the recent past, so I thought it would be good to go back to my original favorite sake.
Katano is Katano's sake, isn't it?

Tasted and purchased in Osaka. The power character of this pure rice unfiltered raw sake is enough to make one drool. The banana-like aroma, the fresh and refreshing slight effervescence, followed by the slightly sweet but rich umami of Aizan, and a firm sharpness. Very tasty...I would like to support this small brewery that seems to be brewing with a focus on original sake.
