Iwashimizu MARS 2023. 50% koji rice. Stable enough to understand why it is often picked up for drinking alone. The fresh fruity sweetness that is typical of Iwashimizu rises up in a straightforward manner, and the mouthfeel is smooth. The sweetness alone does not push it over the edge, but the clear acidity and slight bitterness that appears in the middle of the bottle keeps the whole structure tight and does not let you down as you continue drinking. The balance between gorgeousness, transparency, and drinkability is very good, and while it can be enjoyed without hesitation, it is a bottle that gives a strong sense of the Iwashimizu character.

Mimuro Sugi 35 Dedicated to Katsuhi Takahashi's life. At a friend's house, compared with Shinsei Colors Ash (Suiboku). This bottle is dedicated to Katsunichimei Takahashi, a sake brewing god enshrined in the Miwa area and said to be the oldest living toji (master brewer). The result is a masterpiece that lives up to its narrative. Even before pouring it into a glass, the floral aroma that rises to the surface is simply wonderful. The taste is very gorgeous and gorgeous, with a rich and impressive spread of sweet and sour tones. In contrast, the Ash has a more minimalist and refined expression, with a delicate acidity and a meticulous bubbly feel that is typical of the Colors series. It was a good comparison of two modern sakes that clearly showed the difference in direction.

IWASHIMIZU Éclipse 2022. It will be pressed in 2022 and aged at -5°C for about 3 years. 200 bottles per year will be sold in a 10-year plan. The koji ratio is 50%. The taste has a gorgeous sweetness reminiscent of fruits and flowers typical of Iwashimizu, followed by a slight bitterness and clear acidity in the latter half. While it has the thickness and depth that comes from aging, it is not heavy and is very easy to drink. This is good. This is a bottle that you will want to spend a lot of time chasing after.

Abe Shuzo x Nemoto Sake Brewery Private Bottle Tank #1. A bottle that had been talked about on SNS and I was curious to hear that it tastes similar to a unicorn. It is an experimental design in which aged sake lees shochu is added to sake at the timing of the kijoshu brewing process. When we actually drank it, we found that the composition was highly complete, with a dense, core acidity coexisting with a moderately sweet, elegant sweetness. It is just delicious. Recently, the number of distributors of Abe Sake Brewery has been increasing, and I have the impression that the range of expression of their sake brewing is expanding more and more. I would like to continue to support this brewery.

Daimine 2 grains Aizan. Aizan has a very good balance of sweet and sour, and is smooth on the palate. It is very easy to drink, with no sticking points. The sweetness that is typical of Aizan is expressed honestly, making it an easy to understand and delicious bottle.

A comparison of different types of wine: Shinsei No.6 X-type Direct Path, Jyushidai Nanadaru Nijukan, Sanndo Homasu Roku Nojo, and a port wine from the 1982 vintage. The X dp has a delicate acidity typical of Shinsei with a herbaceous nuance characteristic of X-type wines. The X dp has a mild sweetness reminiscent of milk candy added to it, giving it softness and depth. Shichidaruni-Nijukan stands out for its transparency and sense of harmony, as is typical of Fukuro-hozuri shizukusake. It is beautiful and free of any cloying taste, and one senses a high degree of perfection. San-do Homasu Roku-no Jo is our favorite San-do of the 2024BY. It has a pleasantly clear lactic acidity and an impressive structure that pushes up the umami and sweetness. The 1982 Port wine we drank as a comparison was just as sweet, deep, and brilliant. A glass of this wine is like tasting the time of maturity itself. The comparison of different genres of wine made each wine's individuality more vividly felt.

It still has a somewhat heavenly frog-like quality. It has a pleasantly fresh, delicate gasiness and acidity, and a sense of transparency that spreads easily in the mouth. As the temperature rises slightly, the sweetness swells and the "Yonotori" character becomes much stronger. Just as the name suggests, it is a small Yonotori.

At the Italian restaurant "Presente Sugi" in Sakura City, Chiba Prefecture. It is quite a rare experience to taste a Lapis that is no longer in production. Being Vintage 2018, the acidity is mellowed after several years of aging, and the taste is smooth and angular. The slight sweetness that develops in the second half is very pleasant and delicious.

Shinsei NO.6 A-type Direct path I thought I would never be able to drink it because it was limited to 200 bottles of UTAGE, but my friend unexpectedly won the bottle and we secretly drank it at home 🍶. It was too good to drink it as it was, so I brought my X-type and enjoyed it while comparing the tastes. It tasted like A-type 2024, with a flavor derived from the wooden vat, with hints of apricot, white peach, and lactic acid! The direct pass made the gorgeousness and smoothness stand out even more and was a great comparison to the X-type ✨.
