The timing of its arrival, like a Christmas present from the brewery, makes me happy!
It is a sweet sake with no acidity and easy to drink.
It is available only once a year by reservation only, so I wanted to drink it in small doses with care, but it was so delicious that it ran out quickly.

Enjoy cheap sushi at Totoro, a popular standing sushi bar under the elevated railway tracks of Himeji Station. Although it is a stand-up style sushi bar, there is always a long line of customers because of the high quality of the food. Since I was there, I asked for a local sake, Yaegaki. It was not sweet, but it was not dry either. It was about medium spicy. I am not talking about curry. I had it cold, but I feel it is all-around good at room temperature or hot. It's great for a kotteri type of stuff.
Left it open overnight and drank chilled. Very soft and round mouthfeel. Flavor is forward and has overtones of sweetness, marshmallow, fig, honey. It is dry overall but a tad bit on the sweet side for me.
Yaegaki Shinshu Tokubetsu Junmai Unfiltered Nama-shu 2200 yen (4 gou-bottle)
On the last day of my business trip, I wanted to drink as much as I could, so I went to the store to buy a 4-goupe bottle of sake. I chose this one because it was the newest sake that had just come in.
The set included 100% Yamada-Nishiki, special junmai, and unfiltered raw sake, so we had high expectations. We also went to the basement to get some snacks such as sea bream carpaccio, oysters and burdock fritters, etc. and started to eat them.
The sake is new, so it doesn't have a gorgeous aroma, but it has a slight aroma. As expected, the richness of the raw sake matches the sweetness of the Yamadanishiki, and the spiciness of the aftertaste is my favorite type.
The price is also high for a special junmai, but it is understandable.
Clean and refreshing. It is an easy to drink daiginjo with no nastiness.
I also applied for the new sake that will be released this winter and it will arrive in mid-December. Looking forward to it!

Muscat, lychee, bamboo, burdock and cinnamon. Fresh mouthfeel like a fresh sake. The bitterness gradually increases, leaving a classical sharpness reminiscent of burdock and cinnamon at the end. The mouthfeel and aftertaste are the exact opposite of each other, making this sake a delightful change in flavor.
