Enjoy cheap sushi at Totoro, a popular standing sushi bar under the elevated railway tracks of Himeji Station. Although it is a stand-up style sushi bar, there is always a long line of customers because of the high quality of the food. Since I was there, I asked for a local sake, Yaegaki. It was not sweet, but it was not dry either. It was about medium spicy. I am not talking about curry. I had it cold, but I feel it is all-around good at room temperature or hot. It's great for a kotteri type of stuff.

The aroma is fresh and muscat-like 😚The taste is fresh and the acidity comes forward and is refreshing ✨It has a nice sharpness 😊I felt like it would be a delicious sake for the summer 🥳.

八重垣　純米吟醸山田錦ひやおろし限定 Yaegaki Junmai Ginjo Yamadanishiki Hiyaoroshi Gentei 精米歩合　60% Seimaibuai アルコール　15％ Alcohol Soft, smooth mouthfeel. Really easy to drink, as is. We were “sampling” this a bit too much; let’s try it with food! Mmmm. It pairs really well with sashimi & sushi (鮭, あわび, 鰤, マグロ, 中トロ). This Yaegaki ヤヱガキ even pairs nicely with ラ　フランス pears but not so well with 柿の種 senbei.

I wanted to eat at "Yamayoshi" for dinner in Himeji, where the conger eel was freshly cooked over charcoal in the restaurant. I wanted to eat at "Yamayoshi", but I was not hungry yet, However, I was not hungry yet, so I decided to take out this time. I paired it with sake that I bought at the souvenir shop in Himeji station. This is the first time I saw this brewery. Rice polishing ratio: 65 Alcohol content: 15%. It has a strong rice flavor, a white-bean aroma, and a mild, slightly sweet taste on the palate. It has a mild sweetness on the palate with a bitter aftertaste, which is not the current trend, but it is very tasty. I was worried about my cat Forte after his hospitalization and surgery in the summer. Forte. Now his appetite is back to normal and he has recovered enough to run around the house, so I can finally leave him at home 😁.

I went on a trip to Aboshi and bought this in Himeji when changing trains. The store owner told me that only 777 pieces were made in limited edition. The one I bought was no.263. I was surprised at how delicious it was. I bought one more bottle on my way home.
