This is a summer sake from a local brewery, Kitaan Okuni.
It has a strong acidic flavor reminiscent of lemon with a lactic acid aroma.
It tastes like yogurt.
It is recommended to drink it well chilled 😊.
I don't know if it's a bad idea, but it's also good with soda 😅
I thought it would go well with lamb stewed in curry.

This sake is a project with Hata Sake Shop and the sake brewery 😀.
I saw the brewery's installment and even though I didn't know which brewer's sake it was, I pre-ordered it 🤣.
Rafa papa has already written about the detailed taste, so I'll skip it, but anyway, it was a very round sake with no curd at all😇.
I guess when you let it sit in the snow slowly, it becomes such a round and beautiful sake😇.

With a sake level of -23, this alone makes it quite sweet, but on the other hand, with an acidity of 3.0, it is fermented with a yeast that produces a lot of apple acidity.
Perhaps as a result, the sourness of the apples is effective, and it is not that sweet. I enjoyed it with a sense of spring. I will go to Azumino this summer, so I will buy several kinds then. ❗️

The sweetness is felt when the bottle is opened, but as time goes by, the spiciness wins out and the mouthfeel changes to a crisp one.

It goes well with mozzarella cheese, gratin, and other dishes with white sauce and cheese 🍶.
