Light type, 55% polished rice, 14% alcohol by volume Sake meter: -6.0, Acidity: 2.8, Rich sweet taste Rice: Hitogokochi, Nagano R yeast (high malic acid producing yeast), fire-aged This is a summer sake from a local brewery, Kitaan Okuni. It has a strong acidic flavor reminiscent of lemon with a lactic acid aroma. It tastes like yogurt. It is recommended to drink it well chilled 😊. I don't know if it's a bad idea, but it's also good with soda 😅 I thought it would go well with lamb stewed in curry. Thanks for the refreshing summer drink ❗️

Today I am Beian Daikoku Anniversary😇. This sake is a project with Hata Sake Shop and the sake brewery 😀. I saw the brewery's installment and even though I didn't know which brewer's sake it was, I pre-ordered it 🤣. Rafa papa has already written about the detailed taste, so I'll skip it, but anyway, it was a very round sake with no curd at all😇. I guess when you let it sit in the snow slowly, it becomes such a round and beautiful sake😇. It was delicious 😀.

With a sake level of -23, this alone makes it quite sweet, but on the other hand, with an acidity of 3.0, it is fermented with a yeast that produces a lot of apple acidity. Perhaps as a result, the sourness of the apples is effective, and it is not that sweet. I enjoyed it with a sense of spring. I will go to Azumino this summer, so I will buy several kinds then. ❗️

Kitaan Okuni Aged in snow☃️ Junmai Ginjo Unfiltered Nama-shu One of the heaviest snowfall areas in Nagano Prefecture☃️ Kitayasu Ookuni is a sake matured in the snow for about 2 months in Kotani-mura, Kitaazumi-gun. Aged in the snow for about 2 months in Kotani Village, Kitaazumi-gun❄️ It's a sake that's exclusive to Hata Sake Shop 😌. Sake wrapped in newspaper 📰 is definitely delicious 🤣. Definitely delicious 🤣. You can really taste the flavor of the rice and Sweetness with a gentle mouthfeel 🌾. with a moderate acidity and a beautifully sharp taste. The unique bitterness leaves a slight aftertaste Very mellow and full of flavor🤤. A limited edition sake that will make you feel luxurious 👍‼️

Mouthfeel type Ingredient rice: Hitogochiki produced in Nagano Prefecture Polishing ratio: 59% Yeast: Association #7 Alcohol 15%, Sake meter: -2, Acidity: 1.8 Between rich sweet and rich dry. The sweetness that spreads in the mouth is harmonized with mild acidity, making it a light drink. The sweetness is felt when the bottle is opened, but as time goes by, the spiciness wins out and the mouthfeel changes to a crisp one. Light banana-like ginjo aroma and lactic acidity with a unique yogurt-like flavor. It goes well with mozzarella cheese, gratin, and other dishes with white sauce and cheese 🍶.

This is Kitayasu Brewing's recommended activity. The label on the back says it is light and slightly dry, but it is completely (our comparison). Very Kitayasu Brewing. Kotani Toji is a difficult kanji to read if you are not a sake drinker.

I bought this bottle to taste spring sake during the cherry blossom season. I was attracted by the fresh logo. It has a green apple sticker on it🍏. It tastes exactly like a green apple! The acidity! It's pleasant and refreshingly delicious. There is also a hint of schwarziness. Easy to drink~. Light snacks might be good. Lentil seedlings with sesame oil and salt 🎶.

Refreshing with a strong acidity and a slight carbonation. Sweet and sour like green apple, with a young aroma like blue banana. When warmed, the sweetness weakens and the spiciness of sake becomes stronger. It may be recommended to drink it cold rather than warm. It goes well with avocado dishes, spring-like bamboo shoot dishes, Fukino miso (with sweetness), and kinome (sprouts). Fried food (tempura, chicken cutlet): complements the flavor.

Here is a copy and paste of the comment of No. 86 (I bet my tongue can't tell the difference lol) ↓↓↓↓ Very slight yellow color. Atmosphere and thickening that reminds me of unfiltered. Jambu is strong. Yup. Sweet. But it is delicious. When I'm tired, it's a heartwarming drink.
