This is a superb junmai ginjo-shu brewed in the traditional way by a brewery that excels at making sake using the traditional sake yeast. It has a deep, elegant aroma with a hint of Kyara, a fine, deep, rich, plump flavor, a mild, soft sweetness, and a cool, refreshing mouthfeel. It has a round, lustrous, and highly refined deep flavor that can be enjoyed cold or lukewarmly warmed. It goes well with dishes with soft sweetness and creamy dishes, and is a great choice as a food sake.

Clean and elegantly smell. Slight fruity aroma of pear and apple - then comes the sweetness of rice powder and raw rice and also cream and milk. On palate it is complex yet elegant - silky smooth with fruity, rice and fresh cheese taste. You can expect it has a much aging potential. It has a strong, rich, lactobacillus-like flavor, which is the essence of Junmai Sei Hashiroshi. The aroma is typical of a sake with a strong acidity. I served it cold, but it is recommended to be served hiya or hot. It is a sake to be enjoyed more for its aroma. We waited for it to warm up on the table. It has a strong flavor, so it went well with takoyaki (octopus dumplings), horumon udon noodles, and other street food. I don't think it would go well with sashimi. Also, it went very well with a pumpkin dessert salad I bought by chance.
