First time to try this very premium sake in the brewery itself. But sadly I think it is not in the best condition. Perhaps it has not been rested enough? Or it has been opened for too long? I feel it is a bit plain and I cannot feel the complexity and richness that I would expect. The other ones tasted that day are performing better!

The aroma is yogurt and cheese type acidity and faintly nutty. The aroma is yogurt or cheese-like acidity with a hint of nuttiness.
Freshness that only new sake can have.
After some time, the aroma also has a lychee or pear-like feel to it, with a bitter aftertaste.

We started with "Daishichi Snow Shibori" which was purchased at the event.
When I tasted it, I had an image of a dry sake with a strong flavor, but maybe because it had been a little while, the overall flavor was mellow, with just the right amount of acidity and umami, and it felt fresh and easy to drink as it passed down my throat.
It also had a nice slight effervescence feeling. ⭕️
Quite a dry one but good to drink as there is no burden. Seldom find a kimoto honjozo sparkling in the market so it is always good to try. It still gives you the fruitiness and also with a bit yeasty feel. Sharp and crispy. Not bad.
