I bought a bottle on my way back from a business trip to Tohoku. Daishichi Sake Brewery is located in Nihonmatsu City, Fukushima Prefecture, at the foot of Mount Adatara. Daishichi is named after the head of the brewery, Shichiemon Ota.
The brewery's signature Junmai Namaishizukuri (pure rice and sake brewing), once heated, is rich with the flavor of rice. It can be served cold, but when heated, the acidity rises and the flavor changes to a gentle deliciousness.
I used a set of "Chiikawa" Kurimanju senpai's hot sake set (sake tampo, boar's mouth) that his wife bought.

Nice aroma of cedar barrels. It is a refreshing and easy-to-drink sake.
I look forward to this sake every winter because I can buy it by weight from the barrel at the liquor store. This year too, the owner gave us a big serving overflowing with sake 😁.

It is recommended to be drunk lukewarm, but we tried it at room temperature.
The color is amber, it looks like whiskey, it has an aged feeling like cheese, it is dry and oaky like rice shochu or awamori, it is not fruity, but it has the feeling of dried fruits such as prunes and raisins.
2014BY was served warm. Light yellow in color.
It has a mild, gentle caramelized taste and sharpness. It is a long ripe sake with a surprisingly gentle taste.

I wanted to drink this once to see if I could heat it up.
I had it somewhere between lukewarm to top warmth.
It is as good as its reputation.
I was told by people around me that Daishichi is good cold, but I tried it at room temperature.
But when I tried it at room temperature, I found that I personally prefer it lukewarm.
I personally like it lukewarm.
There are so many mouthfuls of deliciousness.
I think the reputation is only half of the story.

As it is an old sake from 2014, I expected it to be complex, but it was surprisingly clean and easy to drink. I tried heating it up, but the refreshing feeling remained the same. The taste did not change drastically with an increase in umami.
