The aroma is faintly reminiscent of bananas, but the overall aroma is subdued.
The clear mouthfeel is followed by the spread of rice flavor and sweetness, with a lingering sourness.
The overall flavor is light and mild.

Purchased at the Sanomorosugi liquor store in Miwa, Nara! The local sake, made with Yamato rice and yeast from sasayuri (a kind of lily) in the sacred area of Ogami Shrine! Okan opened it while I was away, but I was able to drink the remaining sake safely 😂 Fruity and delicious!

Bodhi yeast. It has a strange taste that cannot be achieved with other yeasts. The sweetness of the rice is well drawn out, and the ripe peach-like fruitiness is followed by a clean keynote aroma. The lingering bitter taste is well balanced!

A blend of Yamada-Nishiki, Dew Leaf Wind, and Nanadoro.
The aroma is clear and reserved.
The sweetness comes first in the mouth.
The sourness is followed by a complex taste with bitterness in the aftertaste.
It has a thick texture on the tongue, which is something we have not seen in Mimuro-sugi so far. But it is delicious.
