Purchased at the Sanomorosugi liquor store in Miwa, Nara! The local sake, made with Yamato rice and yeast from sasayuri (a kind of lily) in the sacred area of Ogami Shrine! Okan opened it while I was away, but I was able to drink the remaining sake safely 😂 Fruity and delicious!
Bodhi yeast. It has a strange taste that cannot be achieved with other yeasts. The sweetness of the rice is well drawn out, and the ripe peach-like fruitiness is followed by a clean keynote aroma. The lingering bitter taste is well balanced!

The aroma is clear and reserved.
The sweetness comes first in the mouth.
The sourness is followed by a complex taste with bitterness in the aftertaste.
It has a thick texture on the tongue, which is something we have not seen in Mimuro-sugi so far. But it is delicious.

The freshness of the freshly squeezed sake, the very crisp mouthfeel of Jungin, and the elegant sweetness spread in the mouth.
It is a limited edition sake that is rarely available...it was a sake that made me feel happy.
Smell of Sake. When I opened my mouth, I could already smell the good aroma from the sake bottle! Contrary to the sweet aroma, it is gassy and tangy on the palate. The taste is like ionized water, but with a mild sweetness when the temperature is cooled down.
When I was in Nara, I bought a bottle of this cedar as a souvenir because I heard that it is only available in the local area. I would have liked to compare it with Mimurosugi! I thought it would be a classic drink because of the difference between hiragana and kanji, but it tasted like sparkling wine 🍷.

After attending Imanishi Shuzo's event on 2025/4/12,
I bought a bottle of Yamadanishiki 50, which was not released at last week's brewery opening.
The aroma is mild, and this one has less of a cedar aroma.
The taste is clean and well-balanced, and it goes in the mouth, down the throat, and after drinking, all on its own without any tugging.
It is too easy to drink, and you can drink too much of it.
It tastes so good that you could finish a whole bottle with a glass of sake.
