Purchased new sake brewed at the new brewery.
The sake is made in wooden vats made of Yoshinosugi cedar in Nara, and the smell of the cedar is said to be transferred to the sake.
The aroma of the sake has a hint of cedar.
Both the aroma and taste are mellow and well balanced.
The alcohol content is 13%, which is similar to Mimuro Cedar DioAbita.
Mildly umami and mildly dry. Easy to drink and delicious.
Purchased at Imanishi-san on the approach to Ojin Shrine, which I visit several times a year. There is much less sake on the shelves than before.
It has been selling well lately, and they are running out of it. As a small brewery, they have considerably reduced the amount of sake they sell to retailers. The store on the approach also needs to increase the number of days it is closed, he said.
The Miwa Lore Storehouse across the street from the approach will open the day after tomorrow. I am looking forward to it.

The bottle was just opened and the carbonation was strong and juicy. It is a very beautiful sake with a sense of transparency, probably because it is brewed with subsoil water. The best snack to go with this sake is "yozakura" (cherry blossoms at night).
