I know this is back and forth, but today is my birthday and I would like to finally get my hands on my Jikin collection 😋. I was lucky enough to buy two more bottles of another kind recently, but I remembered the only one I had dabble in, Hakutsuru Nishiki, and pulled it out of the collection freezer 🥳. The aroma is quite to my liking, with a gentle muscat and pear-like ginjo aroma 😆. Here's a sip! It's mmmmmm... ‼️ It seems to be mellower than when I drank it before. It has a clean and refreshing mouthfeel, with a refined sweetness of rice spreading on the palate, and yet it also has a fruity taste like muscat, and the acidity finishes it off.... One word to describe this wine is "wonderful". It's not too sweet, but has a strong acidity, and I personally think it's great as a mealtime sake or on its own. It's like a similar sake to my favorite Oumine-san? 🤔 I'm still going to work hard on my sake drinking even though there are only a few days left in this year 🥳.

Modest, elegant, delicate, fruity aroma. The acidity is quite strong, which is not found in other Jikin, and it disappears after the mid-palate (after a few days, the acidity at the mouth is quite mild). The sweetness and umami are mild throughout, and the back palate has a strong umami with depth, which is typical of sake. I feel that this is a sake that should be paired with expensive kaiseki dishes. Without any preconceptions, it is a sake that adds color to special occasions. It is expensive, so even if I could buy it, I wouldn't repeat drinking it at home. 4.50

The balance of sweetness, depth and fruity is as good as it gets! I love the sweetness of the rice when you drink it, including the feeling of not having a nasty sake taste that lingers on your tongue!

Luckily, the second bottle of Jishin is on its way home! I will have it with sushi on a good day. The elegant mouthfeel makes you feel like you are drinking a top quality sake. The deep flavor of rice disappears as it seeps into your throat, and if you eat sushi with it, there is no need for words. I wish you another good day 🙏.

Well, well, well... Today is the anniversary of the death of my dear one🙏🙏. I mean, she is my aunt.... She is my father's sister, and it has been 26 years since she passed away. I was still in my early twenties at that time, before I met my wife. My father and I had this cake while talking about the memories of my aunt. It reminds me of many things. She was a very strict aunt, so when I was young, I was more hurt than touched🤣I'm older now, and the situation I'm in now makes it all the more poignant. I wish she had taught me more 🤔.
