It's Junmai with 50% polished rice. But there is no indication of specific name. Why?
It has a soft umami taste on the palate, then the acidity cuts through the umami and it finishes with a wonderful sharpness.
I wonder if the sweetness could be a little stronger.
Jikin Junmai Ginjo Senbon Nishiki Hi-ire
The first sip from the ice temperature is gentle, cappery, thick, and gorgeous. It has a nice aroma with a hint of milky rice.
In the bowl, it is a little smoother and rounder than last time, with a gentle and cute acidity on the tongue and a slight bitterness, and I like the same balance of umami and sweetness.
I think it's probably a little different every year, but the direction is the same, so I can't compare the detailed nuances.
However, this year also has a pleasant medium-bodied feel.
The sweet and sour taste that extends from the medium size to the smooth and clean, acidic and umami taste is also transparent.
After all, Senbon-Nishiki is delicious with its cute acidity!
I like Senbon-Nishiki and Hachitan-Nishiki, though they are relatively calm.

Here is the second one I found at the second restaurant, Jikkai! I wanted to drink it during my trip, so I'm glad I did at least for now😊.
It wasn't a full bottle, but it was delicious and gone quickly!

Jikin's Aizan. It has been in the fridge for a year because I couldn't open it! 🤣 As expected...so I uncorked it. I like Jikin because it is not so sweet and not too heavy. It has a good balance.
Now we only have one bottle of Omachi in our stock of Jikin. This one has only been in the fridge for about 6 months yet. ‼️ lol

I won the lottery at my regular liquor store and was able to purchase 😚.
I started drinking it yesterday and finished it today 🍶.
The sweetness and umami of the rice is amazing. The aroma of rice is also slightly fragrant.
The texture is smooth on the tongue with a good amount of gas. After a day of drinking, the gasiness fades and the sake becomes more moist.
It would probably go well with sushi.
This sake impressed me as one of the top 3 sake I have had this year. As expected of Jikin!
