I make it Kanto style, soy sauce based, with boiled rice cake instead of baked 😊.
And then we had some 而今 nigori that I won at the end of the year in a raffle ✨.
When opening the bottle, the gas was so strong that it spilled a little 😅.
You can smell the mild sweet fruity aroma and the aroma of rice. You can feel the gas, and the fruity sweetness gives way to a full-bodied umami, mild acidity, which disappears along with the gas.
The aroma is citrus and banana🍌. My impression is almost the same as when I drank it outside 🤔.
I'm going to try heated sake as well since it's a house drink.

Hachitan-Nishiki is used as the raw material rice, and its unique charm of a medium type sake stands out.
The palate is filled with fruit nuances such as tangerine, white peach, and mango, which stand out among "Jikin", followed by a beautiful sweetness and umami. The moderate acidity adds to the taste, harmonizing perfectly with the complex flavor of the rice itself.

I had a bottle of Jikin nigori for the first time.
I opened the bottle on New Year's Day with full anticipation. It did not blow out.
It has a banana-like sweetness, a splash of calpis soda, and a bit of bitterness. It is easy to drink and has a delicious flavor that lingers.
We enjoyed it with sashimi and Osechi dishes. It is a beautiful sake that will soon be gone.

I opened a bottle of Hachitan-Nishiki (Hachitan Nishiki) Nama-zake (raw sake) from Jikin, a brand in my personal Hall of Fame!
When you open the bottle, you can smell the ginjo aroma that is typical of Jikin ✨, which is still consistent with the fruity aroma of apple 🍎... 🤤.
But I honestly don't think the difference between hi-iri🔥 and nama-shu🫧 is that big 🤔.
I've been drinking a lot of Jikin and I don't feel that strong shwashiness🫧 in other nama sake except for "Tokujun no Nigori Sake Nama" 😅.
I don't think I feel that strong squishy sensation 😅. I don't feel it 💧.
However, the harmony of sweetness and umami that comes from the smooth mouthfeel 🎻 is still there.
The lingering aftertaste and the sharpness of the finish that permeates through the mouth is unbearable 🥰.
If I had to say something, I would say that this Hachitan-Nishiki has a subtle bitterness in the aftertaste (just the right amount).
Oh well...it is generally delicious... 😋.
I don't remember which label was the first Jikin I drank... but I still can't forget the shock of that time, even after more than 10 years... 🙂↕️

Jikin Junmai Daiginjo Nabari.
This is the flagship of Jikin, made from Yamadanishiki grown by contract farmers in Nabari, Mie Prefecture, the home of Kiyamasa Shuzo.
Mie Prefecture has a reputation for its terroir, ranking 13th in terms of production but 3rd in terms of the percentage of premium rice in Japan.
The blue and shiny Nabari characters on the bottle are stylish!
The nose has a melon and strawberry-like nuance, and the palate is surprised by its smooth, clear texture without any cloying taste.
The elegant sweetness of Yamada-Nishiki is brought out to the fullest. The impression of a well-defined flavor is due to the solid structure of the umami. The beautiful acidity and the astringent bitterness typical of Jikkoman give it a sharp edge.
The taste is extremely complete and well-balanced, and is wonderful!
