What can I say........just the ginjo aroma that comes in softly and slowly makes me smile. ☺️
I mean, it makes me grin, so I guess I'm kind of a weirdo from a third party's point of view😅.
One sip and the fruity aroma and the taste reminiscent of apples and grapes spreads in your mouth, and the piquancy of the raw sake fills your mouth with juwajuwa~... 🥰.
And the stable sharpness... 👏.

I have an image that Jikin's Hi-iri is basically stable in taste even after opening the bottle...but considering that the Nama-Shu became super delicious the other day with Senbon-Nishiki🌾, this Sake Mirai also looks more promising after tomorrow 🤩.

The combination with the relatively crisp tangy lemon salt was a delicious way to enjoy a cup of sake 😁.
Recently, we have had a series of Mie sake, so we opened a bottle of this Jikin to round out our Mie sake lineup😇.
I've had this one many times and it's still delicious and well balanced, and the Aiyama rice is one of my favorite rice varieties, so how could it not be delicious?
The Saku that we opened yesterday is also very tasty and I think it is more fruity than Jikin, which is our favorite, but I still prefer Jikin because of its good balance and umami 🤣.
However, I'd like to drink some of Jikin's fresh sake during the season, since they've only been making hi-iru recently 😀.

The aroma before drinking gives the impression of spreading in the mouth, but the taste is sweet, still not fruit-like sweetness.
Maybe it is because I drank it after drinking other sake, but maybe it is similar to the aroma of straight afternoon tea?
Would it have a different flavor if I let it sit for a while...?

The eleventh and last sake is "Jikin," a sake future type that has been on my radar ever since I entered the restaurant!
It has a brilliant apple and pear aroma with a mild sweetness and umami. It has an elegant taste with a refreshing citrus-like acidity and astringency. The stable balance of Jikkom adds to this, so it has a thick yet refreshing taste!
It is so beautiful that you can't stop grinning. It is a quintessential golden combination 🤤.
