Hachitanishiki 80%, Yamadanishiki 20%.
Alcohol content 15.5%.
Compared to the previous junmai ginjo made with Tojo Yamadanishiki, this is less fruity, but the sweetness afterward is addictive and still delicious 😊.
Whenever I have Jikin, it's always Tokujun.
The waitress told me it was Aizan a while ago and I wanted to try it😅.

Jikkai Tokubetsu Junmai Hi-ire, which we have encountered relatively often recently.
It is very delicious with a good balance of fruity, umami and sweetness. Thank you very much.
However, even this hi-ire sake has recently been resold for a high price on the Internet, which makes me feel indescribable. It makes me feel like I can't enjoy sake any more.

The aroma is subdued, but the soft sweet and sour taste spreads in the mouth.
It has a nice sharpness, and you can drink it in small sips all the time.
The clarity and fruity taste of this special pure sake is very good.

This is the last sake for this event, Jikin's Kimoto Akaban Omachi😇.
In the 12 bottles I chose this time, I had one bottle each of Jikin-san, Shinshu Kamerei-san and Shinmasa-san 😀.
However, I had prepared 5 more bottles each for Mr. 🐢 and Mr. Shinmasa in the additional order, but I didn't hear from them at all 🤣.
I guess everyone is in favor of Jikin-san ❓😅😅.
Anyway, the brewery party ended without any problems.
Thanks to the organizer, Umaisan, and everyone who attended, we were able to have a fun day 😇
There were a lot of things we didn't do well, but please don't let this stop you from coming back for the second Yasubee Kurabiraki 🙏 🙇♀️🙏

I thought Hakutsuru-Nishiki would be good for Jikin, but Mr. Bouken suggested that Akaban-Yumachi was also good, so we decided to open a bottle of both 😇.
Well, Jikin is definitely a delicious sake no matter which one you drink😇.
