The end of the work year is safely over, and we are now on our year-end vacation, so we will be drinking sake from noon! Lately, I like to sip on low alcohol, so I opened a bottle of Sake Cidre by Hachinohe Shuzo, famous for Mutsu Hachisen, which I had been curious about! Aomori Prefecture is known for its apples, and Hachisen seems to be the first brewer to use malic acid yeast in their sake.
