I found and bought a bottle of "Hi-Tsubin - Hukyuu - Type A", which I had not come across many times in the series of Tobirazumi Honpo, which I loved and used to drink every day for a while. Brewed with Yamahai O, O white yeast and No.77 yeast, I was very excited about the taste! I'm a sucker for the extremely sweet taste of Yamahai, but the taste of Hibu was relatively refreshing, even for a brewer like Tobirazumi! The sweetness of the taste is as expected from Tobirazumi, and the sourness with malic acidity from the sweetness is quite impressive! This is one for those who like sweet and sour! Personally, I wanted to sip it like a dessert! Rice polishing ratio : Koji rice 50%, Kake rice 60% (100% Akita Sake Komachi) Alcohol content: 14%.
