The owner offered me a bottle of Jikin, which was the first time for me to drink it. Although I was quite drunk, I remember that it was delicious, with a softness typical of 50% polished Jikin, but also crisp and clean.

First Taxi Driver, R3BY, slightly yellowish in color. When served cold, it has a heavy acidity that is akin to that of a sake brewed in a traditional sake brewery. When heated, it has a mild candy-like sweetness and flavor, but also has a sharpness with acidity. I prefer it warmed.

Clear, sharp, and crisp. The lime-like acidity in the aftertaste is typical of Shikishima, although the softness of the light nigori is not so apparent.

The mouthfeel is clear and refreshing. It has a soft Jungin-like flavor and a hint of Muscat-like fruitiness, and is crisp and clean. Although it was bottled a year ago, there is no sense of twist at all, and it is generally light and well balanced.

Clear mouthfeel. It has a good umami flavor and is clean and crisp. As the temperature rises, it becomes softer, but in general it is a light-bodied sake. There is also a petit freshness of freshly stored sake.

This is the first sake (blend) I have ever had that was made in the year of my birth. The color is a beautiful yellow. Warmed up, it has a soft matured taste, sweetness and umami. It is easy to drink, perhaps because it is alky, but it is hard to believe it is a long-aged sake. This is delicious.

It has a clear flavor that is hard to believe that it is 80% polished, yet it has a moderate rice flavor. It is delicious cold, but even at higher temperatures, the soft umami increases and it is delicious. It has a high degree of perfection.
