We opened the last bottle of the Amami Sake Rice series. This one also has the same grape-like taste and slight bubbly sensation common to the Amami series, but it seems to have a slightly different flavor than the regular ones, although we are not sure if this is due to its Junmai Daiginjo specifications or what. I cannot describe the difference I feel, but it is still a delicious sake. I have now had all four of the Amami sake rice series and was very satisfied with all of them. If they ever release them again next year, I will definitely purchase and drink them.

We went to the brewery yesterday and purchased this bottle, which we opened today. It is sold exclusively at the brewery and is made from 100% Hitogochiki rice. My impression is that it is delicious. It is very fresh because it is a pure sake, and the flavor and sweetness of Hitogokochi can be felt, with no stickiness at all, and it is very easy to drink. It is an excellent sake for a mealtime drink, and we hope that not only the brewery but also the sales channels will be expanded to sell this sake. The price is only 1,300 yen including tax, making it a very cost-effective sake.

This is Aizan, a crop that has not been seen again in almost a year. The aroma is a little weaker than last year's, but the taste is as good as ever. The characteristics of Aizan are fully brought out, and the delicious flavor and sweetness of the rice can be enjoyed. It is the first brand I want to drink every year.

It has been a while since I opened a new bottle of sake, as I have been enjoying wine more recently. This one was purchased during a visit to Nagano, Japan, when I stopped by the brewery. It has been a while since I have had a bottle of Shinshu Kamerei, but it is as delicious as ever, and I have nothing to say about it. It is my favorite sake rice Hitogokochi among Kamerei, so I would like to savor it carefully.

Yesterday, we opened this bottle. It is the third Banshu Aizan from Amami, which we have not had for a while. My impression was that it was a little different from the sake I had imagined, as it was not very Amami-like, nor did it give the impression that the Aiyama was on full display. While it still had the grape-like taste and slight bubbly sensation common to Amami, it was less sweet than the second Hiroshima Senbon Nishiki, and not as sweet as the Aizan from Genmai that I drank before this one, making it a delicious sake with a flavor that I had not imagined. I regret a little that I should have opened the bottle a little earlier and compared it with the two mentioned above.

We opened a bottle of Genmai's Aizan. It was as good as advertised, and we were able to fully enjoy the delicious flavor of Aizan. The sweetness that is characteristic of Aizan matches well with the nettiness and richness that is unique to Genmai, and the slight bitterness makes it not too sweet or harsh, creating an exquisite harmony. Personally, I prefer this to the Harmonic Emotion I drank the other day.

The second in the Toyama Prefecture series is Kurobe Gorge by Hayashi Shuzo. This is the first sake made with Tominokou, the pride of Toyama Prefecture. My first impression of this sake is that it is a dry sake. However, it does not have an all-out traditional sake feel, and the clean water and slightly soft fruity taste make it an easy-drinking sake that is perfect for a mealtime drink.

Yesterday, I had Haneya for the first time. My first impression of the sake was that it had the strength of Omachi, but at the same time it exuded a soft and gentle flavor. It is an easy-drinking sake with the umami of rice, grape-like sweetness, and a dry crispness at the end with a slight alcohol taste. It is different from today's sake, which is full of acidity, but it is also different from traditional sake, making it a delicious sake.

Today, we opened a bottle of Saku from our stock for the first time in a while. This is the first Saku Omachi. My honest impression is that it is a very full-bodied sake. The sweetness and the umami of the rice are assertive at first, and while the sweetness is a little dominant, it is dry and crisp without being sticky. It was a very tasty sake. I have had many sakes from Saku's Sake Rice Series, and while they all bring out the individuality of the rice, they also produce the common taste of Saku, making them very satisfying and highly recommended.

Today, we opened a bottle of this sake, which was unavailable last year. My honest impression is that it is a dark sake with a full flavor of rice. It is one of the two richest Genshu Mai that I have ever tasted, and it has a sake-like flavor, making it an unforgettable sake for those who love sake. Since it is a draft sake, we can enjoy the changes it undergoes after the bottle is opened, so we are looking forward to seeing how it turns out.

Today, we finished Kuroten and opened the second bottle of Hiroshima Senbon Nishiki as planned. My impression was that it was a very tasty sake with a strong grape-like sweetness, a slight effervescence, and a slight bitterness that finishes with a kick. It is certainly a departure from the other Tenbi, but it is a very tasty and satisfying sake, and I thought it was a quintessential Tenbi.

We compared it with the last of the Sogape we opened the other day, and this one was fresher, more slightly effervescent, and more refreshing than the Sogape. It was as tasty as ever, and I thought that next time I would compare this one with the second Hiroshima Senbon Nishiki. (I don't know if I'll open it next, though.)

Today, we opened this bottle, which had been sitting in the fridge. This is my first Trois. The production date was February 2022 and the quality guarantee expiration date was May 31, so I was worried that it had been left too long, but that was not the case and I was able to enjoy it in a relatively fresh state. My honest impression after drinking it was that it was an interesting sake! My frank impression is that it is an interesting sake. At the beginning of drinking, while the acidity was strong, there was an assertion of the umami of the rice, and at the same time, it tasted almost like wine. At the same time, there was a slight effervescence and freshness, but at the end, there was a sake-like alcohol taste, which I have never experienced in sogapés before. As with all of our sogapés, we are looking forward to seeing how the taste changes in the future!

We have opened a bottle of our favorite Nabeshima. This is the first time I have had this one. It was slightly different from the Nabeshima I have had in the past, with a slightly bubbly taste and an assertive acidity at first, followed by a rush of rice flavor, and finally a short, sharp finish. The final taste is short and sharp. While the common way of bringing out the umami of the rice in Nabeshima was more than sufficient, the assertion of the acidity was very fresh and new to me.

This will be my first Shizenigo. Like the Masamune, it was a light sake with a low alcohol content. The impression I got from drinking it was that it had a strong grape flavor and a slightly fizzy taste, making it relatively easy to drink, even for those who are not good at drinking alcohol. Today, we opened a bottle of this sake. Since it was named "Classic," I thought it would be a sake with a strong old-fashioned sake flavor, but as the description says, it was more of a modern sake. The impression I had was that it was a very easy-drinking sake, with a low acidity characteristic of Sengoku, a slight bubbly taste and a slight sweetness, yet it was dry and crisp. I was very satisfied with this sake because it tasted better than I expected.

This year, we were lucky enough to be able to purchase this bottle, which we were unable to purchase last year, so we immediately opened the bottle. Frankly speaking, this sake was even better than expected. I am not a big fan of summer sake, but this one had the dry, effervescent feeling of summer sake, and along with the cool, refreshing sensation, I could taste the delicious flavor of Yamadanishiki, which is different from Sharaku or Tenbi, and I thoroughly enjoyed it. It is also dry, so while it has the sweetness of Yamadanishiki, it does not have a sticky feel. We had it with broiled eel, and it matched the sweetness and spiciness of the eel sauce, making it a perfect food sake. This was the first time for me to try Nabeshima's Moon series, but I felt that Nabeshima is a quintessential sake, and I would very much like to try their other varieties.

This is the first time in about a year. This will be the first of four consecutive months of sales this season. My honest impression is that it is delicious! That is the only word I can use to describe it. Today, we compared it with Sharaku, which we opened the other day. Although there is a difference in the rice and polish, this Tenbi has a strong grape-like sweetness and a refreshing coolness that is unique to Tenbi. The third Akebi will be Aizan, and I am very much looking forward to seeing how delicious it will be. (Before that, we have the second Hiroshima Senbon-Nishiki in the pipeline.)

We were not able to drink it last year, but this year we were able to obtain it, so we opened a bottle with high expectations. My honest impression was that it was even better than expected. It was very mild on the palate, with a touch of sweetness from Aizan, but dry and not sticky, with a slight lingering aftertaste and a crisp finish. I felt it was the kind of sake that does not interfere with the meal, and as a food sake, it enhances the meal while making its own statement. I would definitely like to get this sake again next year.
