Today, we opened this bottle, which had been sitting in the fridge. This is my first Trois.
The production date was February 2022 and the quality guarantee expiration date was May 31, so I was worried that it had been left too long, but that was not the case and I was able to enjoy it in a relatively fresh state.
My honest impression after drinking it was that it was an interesting sake! My frank impression is that it is an interesting sake. At the beginning of drinking, while the acidity was strong, there was an assertion of the umami of the rice, and at the same time, it tasted almost like wine. At the same time, there was a slight effervescence and freshness, but at the end, there was a sake-like alcohol taste, which I have never experienced in sogapés before.
As with all of our sogapés, we are looking forward to seeing how the taste changes in the future!
