Green Junmai Ginjyo Once-fired 100% Fukushima Prefecture sake brewing rice "Yumeko Production date 2023-07Polishing ratio 55%, Alcohol 15%. The middle part of the mouth is light and refreshing. It has a refreshing aroma. It also has a very refreshing aftertaste. ↑Quotes from the official website Blue color Made with Fukushima Prefecture's "Fukunoka" rice suitable for sake brewing Date of production 2023-08 Sake with a soft texture and a refreshing aftertaste. It is a sake that goes well with any meal. ↑From the official website Kinjiro Saito, the first brewer, started brewing sake (before that, he was a farmer and an innkeeper). The name "Kinsho" comes from the fact that there was a mountain producing gold and crystal near the brewery. Tasted under the same conditions (microwave 600W 1min 20sec warmed sake) ^^^;. Green. The taste of rice? Enjoy the deliciousness of sake. It has "a refreshing start, full of umami, and a refreshing aftertaste. The balance is good.... Such a green color. Next, blue. I always feel it is close to the cup sake........ Why is that? Sawayaka-sa" is strong green color. Is it different by rice? I can't come to a conclusion. Complexity expands the enjoyment. Sake is truly profound. The result of the medical checkup was fine.

At Hinoki-no-Sato (I think it was Hinoki-no-Sato), Furusato Meishukan on the 2nd floor of S-PAL, JR Yamagata Station. Local Yamagata people? A local Yamagata resident selected a cup of sake from a number of cups without hesitation. After he had finished his bill (after he was gone), I imitated him and bought a cup of sake like an expert^^; like a connoisseur. I felt sorry for him, but I still wanted to heat up the sake (*^^*). I can't give up here \(^o^)/ "+10" (aji-tataki and takoyaki tonight), but I'll have it. m(__)mm(_ _)m. Oh! It is good (≧∇≦)b. It is one word of "hard-core". A side note. I was surprised that only "Sake of Sake" is displayed on the website of Taruhira Shuzo. I was surprised to see only "Sake of Sake" on the website of Taruhira Shuzo. I pushed here and there with trepidation, and was relieved to find various information. I value Japanese culture." I thought it was wonderful that a sake brewery could make that declaration at the beginning of the company introduction. Thank you very much. m(_ _)m

Purchased at York-Benimaru, a supermarket mainly in Fukushima Prefecture. Sake in one hand, relax and talk a lot in the other." A mild and rich junmai sake that brings out the sweetness of the rice. Enjoy it in a wide variety of ways, from cold to warmed." ←From the back of the label. The label lists five levels: sweetness, spiciness, intensity, and temperature at which it is ready to drink. I'm sure it will be good, heated up tonight too\³, the ceremony of opening the package is my time to heal my tiredness and be excited. (*P*)No、、、、 soft, mellow? The impression of refreshing. I was able to enjoy the warmed sake properly, not contrary to the lovely package. I felt it was an enjoyable sake to buy, try and drink (^^). I will continue to drink it in moderation so as not to get swamped in the swamp of sake.

A stable cup of sake (^^) purchased at a sake shop called Seishuya in Nihonmatsu City. It is a 60% junmai rice polished to a golden color when heated in a lattice. It is made from 60% junmai rice and has a milling ratio of 60%. ←From the official website. It seems that this sake brewery aims to make sake that tastes good even when heated (*^^*). Surprisingly? It's a common sense for connoisseurs? I'm relieved to know that I can enjoy and drink sake freely these days. It has been 13 years since the earthquake. In Leonardo da Vinci's "The Last Supper," Judas was the 13th person seated. I know that 13 is an unlucky and abhorrent number due to Western influence, but for me, "now" is the sake boom. In the words of my beloved predecessor, "I have come to the foot of the mountain, and I am still at the foot of the mountain. I will enjoy each and every bottle of sake carefully and diligently.

At a local food supermarket, Kamakura-ya. This is the second time I have bought a bottle of sake since I was attracted to Senkosei. Well, it's my boom sake now, ( ꈍᴗꈍ), so I took the plunge and bought two bottles. I've been trying hard to advertise the price tag as Fukushima premium, but it hasn't sold for a few weeks....... (I drank it at room temperature, chilled in the fridge, and heated. What is it? Fruit? I thought I bought a sake. ((((; )))) I'm scared to death... "It has a fruity aroma on the palate and a well-balanced flavor of rice that spreads in the mouth and leaves a clean finish. ←Quoted from the official website. It was just as the official website says ^_^ Hmmm, is it a Kasen or a second-grade sake? I started out on this path with regular sake, so I was surprised at how much I enjoyed this sake. I am an IPA beer drinker, but this sweet, full-bodied, and fragrant sake seems to enliven the fun time we all have drinking it together (amateur sake competition ^^;). I will buy it again next time I see it.

The previous one-cup sake Senkosei "Honjozo" was delicious, so I consulted my wallet. We came to an agreement and went to a local sake store in high spirits. I quickly found the same brand in the store and paid the bill. This attitude, as if to say "I remember and know what it tasted like before," later causes me to reflect on the fact that I was not the only one who had tasted it. Heated sake for dinner. I drink it. Something feels different, (...); I look carefully at the name of the raw material. I'm not sure if it's the brewer's alcohol, sugar, or acidifier, but I still can't tell the difference, so I'm satisfied with my Hanamaru tonight. Don't be a know-it-all, but bring a copy of the label, bottle, and cup of the sake you enjoyed (after washing them properly) ← Lesson learned. Hyou = gourd. Kinpyo is a Japanese sake from Kyoto. Kinpyo-bahyo is a horse mark made of golden senryo gourds. It was used by Toyotomi Hideyoshi. Senkosei. Unraveling the history of sake also leads to the history of this country. 240223 Ki

Purchased at the Yamaya Mamigasaki store near the Aeon Yamagata Kita store in the Murayama area (inland) of Yamagata Prefecture. I had seen them when I stopped by the store. It was the first time for me to buy it, but I bought it with all my heart. m(_ _;)mAt first, I drank 3 cups of it at room temperature, though I was intimidated by the box. The dry taste is a mystery word for beginners, but I was truly satisfied with the decision. Next, I heated it up (600W for 1 minute and 20 seconds), and the taste and deliciousness became more "layered" and "deep? Depth? I thought it might be a waste to drink it this way, but it was delicious and I was able to hustle while drinking it at night. It has an intense and pure finish that reminds me of the color of the sky at dawn." ←(quoted from the bottle label). I had an image that dry = scary, but it is very tasty. My physical checkup is the day after tomorrow. Every year I dread the results, but I've gotten used to the word "dry" and I'm starting to get familiar with it. With thoughts of history in mind. 20240219

The name "Senkosei" was first coined by Lord Niwa of the former Nihonmatsu Domain in Fukushima Prefecture, who named the sake after the "Sensei Hyotan" of the previous lord of the domain, Taikoh Hideyoshi. Later, the name "Senkosei" was changed to "Senkou Sei," meaning "a thousand merits" (deeds, deeds of merit, and achievements). ←(Quoted from the origin of "Senkosei" on the website. Hot sake, served hot with a lentil sauce. I can't write about the aroma, because I don't have enough knowledge and expression (but it smelled delicious). The price is a little bit expensive, but we enjoyed a delicious and luxurious heated sake dinner. 20240214 notes

One-cup Ozeki Daiginjo 180ml. the back of the label is easy to read before drinking, it turns out this time. Layers of flavor? The layers of flavor have depth and are deeper and more rounded than the usual one-cup Ozeki Kassen Kamisen. Oh, it's delicious. It was a very elegant sake. 20240213

Paper pack. Purchased to get rid of all prejudices, obsessions and know-it-alls. The first time, I poured it into a one-cup Gekkeikan sake cup and poured it in the microwave, but half of it spilled out in the 600W 1 minute and 30 seconds setting. I had to cool it down and drink it. The second time, I tasted a cup of sake at room temperature before the first attempt and found that it was because the amount was extremely small. The second time, I tasted a cup of sake at room temperature before rinsing. I think it tastes better when it cools down. I think it tastes better at room temperature than hot sake. Good day, good sake, good time.

Purchased from Yamagata Sake Wholesaler. Description quote A rich, slightly dry junmai ginjo brewed to have a hot, thick, and thoughtful flavor like the tears shed by the red devil for his friend who left him in the fairy tale "The Red Devil Who Cried". It is a sake from the Yamagata Okitama region. We enjoyed it while reading Keiji Maeda. I can't write down my impressions because I drank it so quickly, so I decided in secret to try it again. 20231230

I received this from a colleague. The image is easy to approach. I found myself drinking many cups with a boar cup. A person who drinks sake is called "left-handed" or "left-handed". This is from an Edo period slang term, a play on words: "the hand that uses the sake" = "drinking hand" because stone craftsmen hold only the sake in their left hand. It also came to be known as "left party. There is a theory that it was named after the left-handed architect Jingoro Sa, who was also left-handed. In Spain, the term "left-handed person" sometimes indicates a person who commits a crime out of malice or a thief.
