The aroma is fruity but refreshingly dry and slightly sweet, an unfiltered, raw junmai ginjo sake squeezed on New Year's Day. It has a refreshing aftertaste, so you will not be able to stop drinking it.
It starts out a little oily, sweet and fruity, but the aftertaste is rough and dry. The sweet, then the dry, then the sweet, then the dry, then the sweet, then the dry, and so on.
This unfiltered, unpasteurized sake was only available at the brewery. It has a heavy weight and a gorgeous fruity taste. It is a clear indication that sake is a raw product.
Junmai Daiginjo made with Kura-no-Hana, a sake brewing rice produced in the town of Matsushima. It has a rounded sweetness and a refreshingly clean finish.
